About a little over a month ago, I decided to start making bread with airborne starter. It has been a learning process and this is my fifth batch!
A lot to learn, and a lot more patience and research.
I haven’t had any other bread or yeast products for over a month and I only eat from the bread I make which we call in greek, ζυμωτό (zemoto) which means, home made or as a chemistry term: ( fermented)
It is made with a starter that is composed only with flour, water and a little fresh lemon juice.
I use a recipe from a Greek book I picked from one of my past trips to the old country and with a few modifications I am developing what works for me. The total cost for the ingredients is about $15 per batch, which yields 5 loaves of 825 gr. each.
I have seen significant results, health wise, as I am not blotted anymore after eating bread, and i even have more energy.
