Update: Good morning, Weyburn. The last batch of bread is about 15 minutes away from being finished, so I’ll probably get to Wilder Place closer to 11:30. The four cheese garlic-herb focaccia looks and smells AMAZING! Heads up: 4/12 pieces have already been pre-sold, so get there earlier rather than later to avoid disappointment. I will be dropping off baking to Wilder Place
this coming Tuesday (March 17th), so please drop by between 11:00-6:00 for fresh baking. In addition to a small offering of fresh pain de compagne sourdough loaves, there will be 2 special features: the new favourite - four cheese & garlic-herb olive oil focaccia and Irish soda bread.
The new focaccia is getting rave reviews. The blend of four cheeses (creamy havarti, piquant aged cheddar, perfectly melted mozzarella, and D.O.P. grana padano from Italy) is delightful. The generous drizzle of organic crushed garlic, herbs, and extra-virgin olive oil adds another layer of flavour. But my absolute favourite part of this is the perfectly crispy bottom crust. So delicious!
I'm slicing this into smaller portions, so that you can nosh on it for a quick lunch as you go about with your busy day. Order one now and see what the fuss is all about.
The beautiful Irish soda bread is delightfully crusty on the outside and tender on the inside. Organic raisins and organic citrus zest are added to create a slightly sweeter and more complex flavour. It’s so delicious with a shmear of butter and jam but would be perfect dunked in a hearty soup or stew as well.
Although this soda bread has sourdough discard it is a quickbread, so it’s best enjoyed during the first 24 hours. After that, if you happen to have leftovers (highly doubtful because on our first try, we polished off half a loaf! 😂), you can slice it, wrap tightly, and freeze for up to 3 months.
The large loaf is definitely big: over 1200 g of dough, so I’m featuring a medium loaf as well for smaller households or appetites.
