If a recipe calls for red w**e but you're avoiding alcohol or just don't want to open an entire bottle for a single recipe, this simple swap works beautifully: 1 black tea bag brewed in 4 oz hot water + 1 teaspoon distilled vinegar.

This method helps achieve a similar flavour structure to red w**e, which adds tannins, acidity, and depth to braised dishes. Black tea naturally brings those same tannins and a subtle bitterness that mimics w**e’s complexity, while the vinegar adds the bright acidity that balances richness and helps tenderize meat. Together, they create a surprisingly similar flavour backbone without the alcohol.

Here's how to do it:
Brew the tea strong (let it steep 5-7 minutes), stir in the vinegar, and use it as a 1:1 substitute for red w**e in braises like stews, short ribs, or pot roast.

Level up your smashburger game! Follow these tips for success:
1. Use cold 80/20 ground beef. Don't overwork it when forming 2oz balls and keep them cold for the best crust.
2. Smash once! Hard with a grill press. Place each ball on a hot griddle and press firmly once. No re-smashing! That’s how you get those crispy edges.
3. Season after smashing. Salt and pepper go on after it hits the pan for maximum flavour and crust.
4, Don’t flip too soon...Let cook undisturbed until deeply browned and crispy, then flip once and finish with cheese.
Crispy edges, tender beef, melty cheese, and all your favourite toppings… that’s smashburger perfection!
