After resisting for so long, I finally gave in a tried a TikTok food trend lol. Though in all fairness this dish actually does predate TikTok and is a pretty popular party food amongst the Japanese population living in Hawaii. To my surprise though it's actually way better than I assumed it would be and is kind of like a cross between a casserole and a warm California roll that's eaten like a taco. With a recent snow storm and my car still beaten up, I really didn't want to venture outside for ingredients. So I literally threw this dish together using the staples I always have on hand as well as leftovers from last week's episode, and you know what? It was really good and healthy too! Juicy pork, coconut water, caramel and fish sauce. Ok, on paper this Vietnamese braised pork sounds a bit weird, I get it.
