Cheesy Baked Potatoes with Garlic-Dill Yogurt Sauce

Ingredients:
• 1 kg of potatoes, peeled and boiled (in salted water) until al dente, or you can leave the skins on.
• Salt to taste
• Olive oil to taste
• 1 teaspoon sweet or smoked paprika
• 1/2 teaspoon ground black pepper
• 1 teaspoon garlic powder
• Grated cheese (enough to cover the potatoes)
• Dill for serving

For the sauce:
• 1 container of plain yogurt (about 170 g)
• 1/2 or 1/4 clove of garlic, minced or grated
• Juice of 1/2 lemon
• Salt to taste

Instructions:
1. Prepare the potatoes:
• Preheat the oven to 200°C (390°F).
• In a large bowl, toss the boiled potatoes with salt, olive oil, paprika, black pepper, and garlic powder. Mix well to ensure they are evenly seasoned.
• Spread the potatoes on a baking sheet in a single layer.
2. First baking step:
• Bake the potatoes in the oven for 15 minutes.
3. Add the cheese:
• Remove the baking sheet from the oven and sprinkle the grated cheese over the potatoes.
• Return to the oven and bake for an additional 10 minutes, or until the potatoes are golden and the cheese is melted and bubbly.
4. Serve:
• Garnish with dill on top and serve with the yogurt sauce on the side.

Gnocchi gratin 🤤

To make a gratin, place the cooked gnocchi (you can buy or make it :) in a baking dish, add tomato sauce seasoned with garlic salt and pepper, top with cheese (I used Gouda and grano padano) and bake in a preheated oven at 180°C (350°F) until the cheese is melted and golden brown.

Nhoque gratinado 🤤

Para fazer um gratinado, coloque os nhoques cozidos em um refratário (vocês podem comprar o nhoque pronto ou fazer em casa) adicione molho de tomates temperados com alho refogado sal e pimenta e cubra com queijo (vocês podem usar uma mistura de queijos e catupiry e para cobrir parmesão ralado) e leve ao forno preaquecido a 180°C até que o queijo derreta e fique dourado.

Can you tell me what Feijoada is?

Feijoada is a bean stew with beef and pork, but here it is a vegetarian version with smoked tofu mushrooms and vegan sausages.

The name feijoada comes from feijão, 'bean' in Portuguese. It is widely prepared in Brazil and there are also 2 Feijoada days in a week in certain restaurants which are every Wednesday and Saturday. This means those restaurants have a feijoada option every Wednesday and Saturdays in their menus.

It is usually served with rice, farofa (is a type of meal made from toasted cassava or corn flour) couve (which is a Brazilian version for a green kale) and a spicy vinaigrette made with tomatoes, herbs lemon and onions.

This is the perfect match in a food form and brings me to memories of home and loved ones.

This is a heartwarming and ideal meal to share with friends. ♥️
