🐟 Fish 'n' Chips with freshly caught cod
Few things beat crispy cod coated in a light and airy beer batter. Served here with triple-cooked fries and homemade tartar sauce.
Tartar sauce:
• 100 g mayonnaise
• 1 tbsp crème fraîche
• 1 tbsp capers
• 2–3 cornichons
• ½ tbsp onion
• 1 tbsp chives
• 1 tbsp parsley
• ⅓ tbsp Dijon mustard
• Salt and pepper
Beer batter:
• 200 g all-purpose flour
• 1 lager beer
• ½ tsp cayenne pepper
• 1 tsp fine salt
Mix all the ingredients for the tartar sauce and refrigerate until ready to serve.
Whisk together the ingredients for the beer batter until smooth. Dip the cod pieces into the batter and deep-fry at 180°C (356°F) until golden and crispy.
Serve with crispy fries, tartar sauce, and lemon wedges.
