4–5 slices galangal (or ginger if unavailable)

4 kaffir lime leaves, torn

1 cup mushrooms (straw or button mushrooms, sliced)

2–3 Thai red chilies, crushed (adjust to taste)

2 tbsp Tom Yum paste

2–3 tbsp fish sauce

2 tbsp lime juice (add at the end)

½ tsp sugar

Fresh coriander leaves (for garnish)

Optional (Creamy Version):

¼–½ cup evaporated milk or coconut milk

---1️⃣ Make the Soup Base

Bring water or stock to a boil in a pot.

Add lemongrass, galangal, and kaffir lime leaves.

Simmer for 5 minutes to release the aroma.

Add crushed chilies and Tom Yum paste.

Stir well until fragrant.

---3️⃣ Add Mushrooms & Prawns

Add mushrooms and cook for 2 minutes.

Add prawns and cook until they turn pink (2–3 minutes).

Add fish sauce and sugar.

Taste and adjust salt, sour, and spice levels.

Turn off heat.

Add lime juice (important: add after cooking).

2. Line and grease an 8-inch round cake tin.

1. Mix soft butter, brown sugar, and cinnamon into a paste.

2. Set aside.

200g digestive biscuits (or graham crackers), crushed

100g melted butter

2 tbsp sugar (optional)

400g cream cheese (room temperature)

250ml whipping cream (chilled)

120g powdered sugar

1 tsp vanilla essence

1 tbsp lemon juice

1 tbsp gelatin + 3 tbsp warm water
(optional but helps the cheesecake set better)
......For the topping (optional)........

Strawberry or blueberry sauce

Fresh berries

Chocolate shavings

1. Make the crust🍰

1. Mix crushed biscuits + melted butter until sandy.

2. Press firmly into the bottom of a springform pan (20–23cm).

3. Chill in the fridge for 15 minutes.

1. Beat cream cheese, powdered sugar, lemon juice, and vanilla until smooth.

2. In another bowl, whip the cold whipping cream until stiff peaks form.
