1 1/2 lbs boneless, skinless chicken thighs
2 medium onions, diced
2 cloves of garlic, minced
1 tablespoon grated fresh ginger
1 teaspoon ground cumin
1 teaspoon curry powder
1/2 teaspoon turmeric
1/2 teaspoon cayenne pepper
1 can (14 oz) diced tomatoes
1 cup chicken broth
1/2 cup heavy cream
Salt and pepper, to taste
Fresh cilantro, chopped (optional)

Heat oil in a large pan over medium heat. Add onions and cook until softened, about 5 minutes.
Add garlic, ginger, cumin, curry powder, turmeric, and cayenne pepper. Cook for 1 minute, stirring constantly.
Add chicken and cook until browned, about 5-7 minutes.
Add diced tomatoes, chicken broth, and heavy cream. Bring to a simmer.
Reduce heat to low and let cook, covered, for 20-25 minutes or until chicken is cooked through.
Season with salt and pepper to taste. Garnish with chopped cilantro, if desired.

1 pound carrots, peeled and sliced into 1/4-inch thick rounds
1 cup (250ml) white vinegar
1/2 cup (125ml) water
1/4 cup (60g) granulated sugar
1/4 cup (60g) salt
2 tbsp (30g) pickling spice
1/4 cup (30g) chopped fresh dill
1/4 cup (30g) chopped fresh parsley

In a large bowl, combine sliced carrots and pickling spice. Let it sit for 30 minutes to allow the carrots to release their excess moisture.
In a medium saucepan, combine vinegar, water, sugar, and salt. Bring to a boil, stirring to dissolve the sugar and salt.
Pack the carrot slices into a clean glass jar, leaving about 1 inch of space at the top. Pour the hot pickling liquid over the carrots, making sure they are completely covered.
Seal the jar and let it cool to room temperature. Refrigerate for at least 24 hours or up to 2 weeks.
Just before serving, garnish with chopped fresh dill and parsley.

In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add the diced onion and cook until translucent, about 3-4 minutes.
Add the minced garlic and cook for an additional minute.
Add the beef to the skillet, breaking it up with a spoon as it cooks, until browned and cooked through.
Add the taco seasoning and stir to combine. Cook for 1-2 minutes.
Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
Assemble the tacos by spooning the beef mixture onto a tortilla and topping with cilantro, lime juice, and desired toppings.
