FLYING IN THE WIND 🥧✨
Vol-au-vent literally translates from French as "flying in the wind" - and once you taste it, the name makes perfect sense.
It's incredibly light, delicate, and airy, almost like a cloud ☁️
That effect comes from its carefully layered structure: crisp, flaky pastry on the outside, a rich and creamy filling inside, all brought together by a silky sauce. Every element has its role, and together they create perfect balance 🤌🏻
The special touch in my version is mollejas (sweetbreads, or thymus gland). It may sound unusual at first, but the texture is incredibly tender, buttery, and delicate - exactly what works so beautifully with crisp pastry and earthy mushrooms.
Great cuisine is often built on contrasts like these ✨
