Roasted Beet Salad with Basil and Perilla. | Quick and easy salad

Roasted beets with fresh basil and perilla, a splash of w**e vinegar and balsamic glaze. Topped with pumpkin seeds and feta. Easy, quick, delicious and a nice way to get a little bit of iron.

Simple Yogurt Ranch Dressing
Recipe
1.5 cup unsweetened plain yogurt
2 tbsp rice vinegar
2 tsp garlic powder
2 tsp onion powder
1 tsp pepper
3 tbsp fresh parsley
3 tbsp fresh chives
1/4 cup fresh dill
You can adjust the herbs based on what you like, dill is most important for ranch though. If you don't have fresh, substitute for dried.
1.5 tsp each of the dried, little more of the dill.
Great on salads, wraps, sandwiches or as a dip!
