What role does water play in a kaiseki meal?

At One-MICHELIN-Starred GAGGEN by Choi Junho, chefs Choi Hyeon-ah and Won Jin-hee consider it part of the course itself — helping carry diners from one dish to the next without distracting from the expression of each seasonal ingredient.

"I wouldn't say water erases the palate," says Won. "I'd say it organizes it."

The secret to great fried chicken? It's not about making it as crispy as possible.

Vietnamese chef Duy Nguyen of MICHELIN-listed Little Bear, a wine bar featured in the MICHELIN Guide Vietnam 2026 in Ho Chi Minh City, says the best fried chicken should be crunchy on the outside and juicy on the inside.
