“The best pain au chocolat of the entire trip.”

We think that might be one of the best compliments a croissant-making class in Paris can receive.

Our guests joined us to discover the techniques behind French croissants and pain au chocolat — and then got to experience the best part: tasting their creations straight from the oven.

There is something very special about that first bite: warm, crisp, buttery layers and melted chocolate, knowing that you made it yourself.

But a great pastry experience is about more than the final bite. It’s about learning from a professional French pastry chef, understanding the techniques behind the dough, and sharing a memorable moment in Paris.

Thank you to our guest for this wonderful 5-star review and recommendation.

Behind every great croissant... there's a lot of butter. 🧈🥐

Not just any butter.

French butter is one of the secrets that makes croissants around the world so irresistible.

Why?

✨ Higher butterfat content
✨ Better flavor
✨ Better lamination
✨ Crispier layers
✨ More beautiful honeycomb structure inside

When we teach our croissant classes in Paris, we don't just show you how to make croissants. We explain why every ingredient matters.

The stack of butter in this photo may not look glamorous, but it is the foundation of every flaky, golden croissant that comes out of our ovens.

Understanding butter means understanding croissants.

And once you've made your own croissants from scratch, you'll never look at breakfast the same way again.

🍫🥐 Dear KitKat team… maybe it’s time for a different kind of break?

We heard about the missing 12 tons of chocolate — not exactly the kind of surprise anyone wants. If you need to recover from the shock (or simply turn the page with something sweeter), we might have an idea.

Come to Paris and trade stress for butter, technique, and creativity. Our two-tone chocolate-praline croissant class is the perfect way to reconnect with what really matters: turn chocolate into something layered, refined, impossible to forget, and the simple joy of making something beautiful and delicious.

Not all chocolate stories end badly.

Understanding the Fève: A Key to French Pastry Culture
To understand French pastry, you must understand its traditions — and the fève is one of the most revealing.

Hidden inside the Galette des Rois, the fève is a small object with ancient origins. Long before puff pastry existed, beans were used in cakes to randomly select a “king” during winter celebrations. This ritual survived and became part of the Epiphany tradition.

Over centuries, the fève evolved. Real beans were replaced by porcelain figurines. These figurines became more detailed, more symbolic, and eventually collectible.
Today, every Galette des Rois contains a fève, but not all fèves are equal. Artisan bakers and pastry chefs often choose or design specific models that reflect their identity or values.

The ritual of sharing the galette — cutting it, assigning slices blindly, discovering the fève — is as important as the recipe itself. It teaches something essential about French food culture: pastry is not only technique, it is transmission.

This is why learning French pastry also means learning its rituals. In our pastry classes in Paris, we teach more than how to follow a recipe. We explain why traditions exist, how they evolved, and what they mean in today’s professional pastry world. Understanding these details changes the way you bake — and the way you see French pastry.
