Ma dernière création : le Sushi de la Forêt.

Une création autour du cèpe, mariné puis délicatement flambé, où l’univers du sushi rencontre les saveurs profondes et boisées de la forêt.

Une nouvelle façon pour moi d’explorer le sushi, entre technique japonaise et produits qui m’inspirent.

This is me on my day off!

On our way back to Sweden, we stumbled upon this amazing little brunch spot in Germany, run by a lovely Portuguese cook and her son.

They served us this beautiful breakfast, full of flavour and generosity ! exactly the kind of unexpected place I love discovering while travelling !

Sometimes, the best food experiences are the ones you weren’t looking for. ✨

I’d like to call this one: Swedish Ravioli.

Inspired by my Italian roots, I wanted to adapt some of my cooking creations with Nordic flavours.

For this dish, I stuffed fresh ravioli with a filling of salmon, chives and dill, then paired them with a creamy shrimp-infused sauce.

Finished with fresh chopped dill and a touch of chilli pearls for a little freshness, colour and heat. ✨

A small meeting between Italy and Scandinavia, through one of my favourite things to do: creating new combinations from different culinary cultures.
