Kalio simply means pork curry in Malay. I have made this with pork shoulder steaks cut into bite sized pieces. It is one of my grandmother’s recipes which she would treat us to occasionally. Similar to a Rendang curry but contains more lemongrass and galangal and fresh kafir lime leaves. I will let you into a secret - simply combine half a jar of the Nonya Secrets Rendang curry mix and half a jar of the Nonya Secrets Nonya Sambal curry mix - this will produce the right spice paste which you then cook the pork steaks with a can of rich coconut milk. A gentle simmer for half an hour and the most tantalising aroma with be emerging from the kitchen luring you to dinner. Please try it.
