SUMMER PASTA IS HERE, a bit late but this is how you cope with this heat: slow cooked onions, garlic and courgettes, then raw peppers and carrots for the crunch, olive pate and crispy onions.
Chefs suggests to add anchovies or guanciale, but never both! Parmesan optional.
