Seriously good beef ribs on the pit barrel yesterday!

Red Cajun chicken fajitas on the pit barrel using this stunning le cruset cast iron.

Drizzle chicken thighs with a little chilli olive oil and sprinkle with Angus & Oink red Cajun.
Do the same to the slices pepper and onion, but keep them separate.

Cover and refrigerate why you heat up the barbecue and the cast iron.

Light the pit barrel and place the cast iron on the grates with the lid on top and the vent a quarter open.

Once the cast iron is hot add the chicken to one side of the pan and replace the lid, allow to smoke for around 25 mins then flip the chicken once and then add your peppers and onions on the opposite side, replace the lid and open the vent to half open and let it cook for 30 minutes more.

Serve on a tortilla with some sour cream and I used a cumin cheddar that I got at farmfest grated over the top with some lambs lettuce. Totally gorgeous 💖
