A month of harvest festival and thanks for the wild food that nature gives us, that Autumn chill brings on wholesome cooking inspiration and cosy evening fires, outdoors life is full of colour and change, Autumn walks, morning mists, beautiful skies and soup and pie season, I love it!
Two good uses for all those lovely apples 🍏 🍎
Apple, walnut and chocolate chip muffins 🤎
Apple slaw, just with grated apples, carrot, white and red cabbage. The healthy dressing with lighter crème fraiche, natural yoghurt, wholegrain mustard, cider vinegar, olive oil and salt and pepper. A little fresh chopped parsley added too! 💚
APPLE AND WALNUT CHOC CHIP MUFFINS
2 large eating apples, peeled, cored and diced
250g spelt, wholemeal or plain flour
2 tsp baking powder
2 tsp ground cinnamon
125g light brown sugar + 4tsp for sprinkling
125ml honey
60ml natural yoghurt
125ml vegetable oil
2 large eggs
75g chopped walnuts
75g chocolate chips
Measure the flour, baking powder and 1 tsp of cinnamon in a bowl, add half the chopped walnuts.
In a separate bowl whisk the eggs, sugar, honey, yoghurt and oil.
Put the other half of the walnuts, the second tsp cinnamon and the 4 tsp sugar in a small bowl for the topping.
Fold the wet ingredients into the dry, add the choc chips.
Don't over mix, lumpy mixture makes lighter muffins.
Spoon into the muffin cases and sprinkle the topping mix over the top.
Bake for about 20 to 25 minutes until risen and golden on top 😋
