It was a beautiful morning as we left Trent Lock, not to last though, we had downpours and thunder! ☔️

Guess what we had for breakfast?!

CHOCOLATE SALTED CARAMEL BROWNIE 😜

This all came about because I had half a tin of condensed caramel left from an inventive indulgent sweet fix of caramel swirled together with natural yoghurt!

Here’s the recipe….

300g unsalted butter
400g caster sugar
100g light brown sugar
70g cocoa powder
70g dark chocolate (minimum 70% cocoa solids)
4 eggs
140g plain flour
1/2 tsp fine sea salt

Preheat the oven to 180 fan/gas mark 6
Line a tin, 8 x 12 inch or 8 inch square for deeper

Cut the butter into cubes and place in a large saucepan, followed by the caster sugar, brown sugar, cocoa and dark chocolate, in this order so the butter melts first. Place over low heat and leave for a few minutes, without stirring. The butter will completely melt and absorb the other ingredients.
Remove from the heat.
Then give the mixture a good whisk.
Once everything is fully melted and brought together, crack the eggs directly into the pan.
Whisk together until glossy and combined, then tip the flour and salt into the bowl and bring together, making sure all the flour is incorporated.
Pour into the tin.

This step is optional:
Add dollops of the tinned caramel and then create a marble effect using a fork or cocktail stick.
Sprinkle a little extra sea salt on top.

Bake in the centre of the oven for 30 to 40 mins,
until a skewer comes out clean and the mixture no longer wobbles, ding be tempted to overcook.

Allow to cook in the tin before lifting out and cutting into squares. Fridge before cutting for cleaner cuts.

Yesterday was an expensive day!

The hosepipe sprung a leak and the sunglasses went overboard!

We also had to replace an empty gas and buy some essentials for our elsan loo, that’s part of boating though and those things we never like to run low on.

Sawley has all the services…..
Water, elsan and rubbish disposal.

We’re also full to the brim of diesel.

My galley food stores are always full of course! 😜

That’s basically a perfect boater’s eutopia, less the expense! 😂

Oh and we have washed the boat 🧽 😬
