The first rosehip gatherings have gone into the freezer, this will help break down the fruit and release the natural sugars for homemade rosehip syrup. 🌹

Apples are a big feature in this month’s recipe choice. 🍎 💚

Skin on home made twice fried chips, sprinkled with Malden salt flakes and a lovely salad of:
Spinach, apples, celery, walnuts and Stilton
That zingy dressing I use on a carrot, apple and cabbage slaw the other day......
Keeps in the fridge if not all used at once
2 tbsp crème fraiche
2 tbsp natural yoghurt
1 tsp wholegrain mustard
2 tbsp apple cider vinegar
1 tbsp olive oil
Salt and pepper 😋

Mostly we eat vegetarian….

I eat vegetarian all the time, he likes a bit of the other stuff now and again! And to be honest, because I’ve been a veggie for over 40 years, brought up on a farm and all that, seen a lot, I respect people’s choices and don’t mind cooking meat and fish for those who want to eat it, as long as it’s British wherever possible!

Sometimes I really push the boat out, pardon the pun!

Spoiling my man….

Tonight it was steak, ale and Stilton pie for him….

With home made chips (of course) and kale for greens! 😅

Slow roast Hasselback courgette and aubergine (in the oven earlier because it was on for bread) marinated in a simple harissa (supermarket) spice blend and olive oil.
Butter bean base recipe: gently fry onion, cumin seed and garlic, add tinned butter beans with some of the liquid and 1 tbsp tahini, blitz to a paste.
Finish with freshly chopped coriander, chilli and a squeeze of lemon. 🍋 😋

I love September 🧡
A month of harvest festival and thanks for the wild food that nature gives us, that Autumn chill brings on wholesome cooking inspiration and cosy evening fires, outdoors life is full of colour and change, Autumn walks, morning mists, beautiful skies and soup and pie season, I love it!

Two good uses for all those lovely apples 🍏 🍎

Apple, walnut and chocolate chip muffins 🤎

Apple slaw, just with grated apples, carrot, white and red cabbage. The healthy dressing with lighter crème fraiche, natural yoghurt, wholegrain mustard, cider vinegar, olive oil and salt and pepper. A little fresh chopped parsley added too! 💚

APPLE AND WALNUT CHOC CHIP MUFFINS
2 large eating apples, peeled, cored and diced
250g spelt, wholemeal or plain flour
2 tsp baking powder
2 tsp ground cinnamon
125g light brown sugar + 4tsp for sprinkling
125ml honey
60ml natural yoghurt
125ml vegetable oil
2 large eggs
75g chopped walnuts
75g chocolate chips
Measure the flour, baking powder and 1 tsp of cinnamon in a bowl, add half the chopped walnuts.
In a separate bowl whisk the eggs, sugar, honey, yoghurt and oil.
Put the other half of the walnuts, the second tsp cinnamon and the 4 tsp sugar in a small bowl for the topping.
Fold the wet ingredients into the dry, add the choc chips.
Don't over mix, lumpy mixture makes lighter muffins.
Spoon into the muffin cases and sprinkle the topping mix over the top.
Bake for about 20 to 25 minutes until risen and golden on top 😋

Just had half an hour tv viewing, Robbie Cu***ng Canal Boat Diaries, tonight’s (repeat) episode was all about the Chesterfield Canal on UK Yesterday Chanel. 🥰

Looking back at my photos from when we met at the same mooring spot.😍

I gave him home made bread, cake, biscuits, chutney and a bunch of cut herbs from my roof garden 😅

Honestly, I wasn’t stalking him! 😂😂
