The tools of my trade.

My first experience sharpening knives came when I left college and began training to be a butcher.

15 years later, I’m still a butcher, having worked in respected establishments throughout Cambridge. Over that time, I’ve spent thousands of hours honing my craft as a sharpener, and become a true knife enthusiast along the way.

My free time is now dedicated to running Ely Knife Sharpening, giving me the opportunity to put my passion for knives and sharpening into practice.

Beautiful Carbon Misono Gyuto in for sharpening this morning.

These knives are ground asymmetrically, with a 90/10 bias. I focused most of the sharpening on the side with the larger bevel, working only lightly on the other side to preserve the geometry of the knife.

A really lovely knife to work on.
