About Emy

I’m Emy, a content creator by day and a keen foodie by night. Along with help from my partner Matt Sanders, we founded realfoodie in 2016 after I won the Devon Life Home Cook of the Year co

mpetition. Winning the competition elevated my cooking confidence, it’s one thing to have your friends and family say your cooking is great… but when Michelin star chefs not only eat your food, but say it tastes good… well what can I say, it was an amazing experience! Through realfoodie, my aim is to inspire you to produce delicious food at home using everyday ingredients. There will be the occasional foodie find and tips on how to elevate the everyday dinner to the ultimate dinner party dish. The recipes that influence me and meals I create are inspired by the things I like to eat and the ingredients that are in our cupboard that week. I’m a real savoury cook at heart and I love to experiment with different flavours and ingredients as I go along – this is real food cooked at home in my own kitchen, and yes i use butter…sometimes even cream! About Matt

Matt handles all things technical, the realfoodie website is currently being developed by him. He’s also the baker in our home, so some of the more constrained recipes will be borrowed from him (think pizza dough, focaccia…). Plus he has the role of first-taster, providing that all import constructive criticism to support the development of my recipes!

Rice Bowl with Teriyaki Salmon, Samphire, Edamame & Pickled Red Cabbage 👀

Loooove these bowls! I threw this one together for dinner tonight and it was so good!

The cabbage was tossed together with a little sugar and red wine vinegar. While the salmon was coated in teriyaki sauce and air fried for 8mins (ish) at 190c.

Such an easy, healthy-delicious dinner in as long as it took to cook the rice. Happy Friday foodies 🖤

Fancy a Steak? Cook This 🔥

Beef Fillet. It was on special at the supermarket for £13 (for 500g ish), and with an extra 20% off! Insane.

I seared it hard, then roasted it until 52 degrees C (approx. 25mins), rested well then sliced. Served with some crispy little Anya potatoes, parmesan salad and a maraschino cherry sauce:

5tbsp maraschino cherry syrup
1tbsp balsamic vinegar
Pinch black pepper
Beef cooking juices

Giant Ravioli with a Garlicky Garden Herb Butter 👌

These are filled with spinach & ricotta and tossed in a little combination of melted butter and extra virgin olive oil with garlic, sage, sage flowers, oregano & lemon balm.

Finished with a little parmesan cheese and salt & peppery seasonings for a quick and easy summer dinner ☀️

It’s picnic szn 🥵

These are my Crispy Air Fried Sausage Rolls with Piccalilli 👌 …It’s such a delicious recipe for easy snacking and summer picnicking! The piccalilli adds a tangy contrast that cuts through the sausage meat perfectly!

Recipe makes 16 small sausage rolls:

 For the filling:

* 500g sausage meat
* 1tsp fennel seeds
* 1tsp black pepper
* 1/2tsp sea salt
* 1tsp red chilli flakes
* 3tbsp piccalilli relish

 Pastry:

* 500g pack puff pastry
* 1 egg for glazing
* A pinch of seeds for the topping (optional)

> Mix all filling ingredients together in a bowl until well combined. Scrunch everything together with your hands, it will be sticky, but it comes together fine.

> Cut the puff pastry into two equal parts. Roll out one half into a long rectangle (about as thick as a pound coin).

> Spread the piccalilli along the length of the pasty, just off centre and reserving a small boarder. Add 1/2 of the sausage mixture on top of the piccalilli, making a sausage shape.

> Crack the egg into a bowl and briefly mix. Brush the egg wash along one side of the exposed pastry next to the sausage meat (it will act as a kind of glue). Fold one side over to meet the other & firmly press to seal. You should now have a massive sausage roll. Repeat with the second half of the pastry.  

> Cut into bite-sized portions, score the top of each and brush with the remaining egg wash. Sprinkle with seeds and pop the in the Air Fryer (200c / 20 mins, or until cooked through), with a little bit of space around each one. You may need to cook these in two batches.

Just a Reminder ~ You Can Have This on the Table in 30mins ☀️

One Pan Roasted Gnocchi with Burrata, Tomato & Chorizo:

Just chuck a bag of gnocchi on a sheet pan with some quartered tomatoes and chorizo (optional) and season…

Generous glug extra virgin olive oil
1 tbsp oregano
1 tbsp garlic granules
1 tsp sea salt

Roast for 25-30mins on gas 6/200c until the gnocchi is all golden and the tomatoes jammy. Top with ripped burrata, basil and herbs as you like!

Swirly Sausage and Creamy Beans 💥

The spiral traps flavour. I will not be taking questions. For the beans:

1 jar white beans
1/2 can polpa tomatoes
1tsp miso paste
1tsp chicken stock powder (or similar)
1tsp balsamic vinegar
3tbsp sour cream
Sea salt, to taste

> gently simmer the beans and tomatoes together along with the miso and stock. Add the sour cream and season to taste. You might need to loosen a little with water depending on the beans!

Oats on Oats Protein Bowl 🫐

Ugh I LOVE these kinda breakfast bowls! I’ve used a combination of really nice ingredients from (Aff, Partner ~ EMY10 for discount) ~ they’re minimal and free from a load of processed crap:
