Prawn Cups for the win πŸ† ingredients and how to πŸ‘‡ πŸ‘‡ πŸ‘‡

You will need:
Wonton wrappers
Tiger Prawns (we had 2 per person)
Chilli powder
Limes
Sour Cream
Olive oil
Salt
Cayenne Pepper (optional)

Start by brushing both sides of the wonton wrappers lightly with oil and season with salt

Place the wrappers into muffin/Yorkshire tin, bake 140 degrees for 5 mins or until crispy, remove from oven and set to one side

While the wrappers cook marinate raw tiger prawns with olive oil, chilli powder, lime zest and lime juice. bake at 140 degrees for 8-10 mins or until pink throughout.

mix lime zest and lime juice with soured cream and salt.

Fill the wonton cup with some rocket, a spoonful of the lime soured cream and place a prawn on top, sprinkle cayenne pepper to finish if you like a bit of spice and and a squeeze of lime.

Butternut Squash, Spinach and Feta Pasta Rolls πŸ˜‹πŸ˜‹πŸ˜‹

Place a whole oiled butternut squash into a roasting dish and cook for 1 and a half hours @ 190 degrees. Remove from the oven and then slice in half, remove seeds and skin and then mash the inside with a little sea salt.

Heat a saucepan on a medium heat and add a tablespoon of olive oil and then fry 3-4 cloves of garlic, a diced chilli and a chopped onion. Once softened add 700ml of passata, the same amount of water, salt and pepper and reduce. Add a pinch of sugar if the sauce is not sweet enough.

Whilst the sauce simmers, dip fresh lasagne sheets into a pan of boiling water for a few minutes or until soft and can be rolled then remove and drain.

Take a bag of frozen spinach and heat in a large frying pan with salt until defrosted and all the water has evaporated. Towards the end of the cooking add 2-3 cloves of garlic and grate some nutmeg on top.

Lay the lasagne sheets out and spread the squash on top, then the spinach mixture and top with crumbled feta and parmesan.

Roll the sheets and then cut in half. Pour the tomato sauce into a casserole/lasagne dish and then pack the halved pasta rolls into the dish.

Top with lots of parmesan and sage leaves and bake for 45 mins.

Serve with garlic bread.

Moroccan chicken with cous cous

Heat olive oil and butter in a casserole dish, then sear chicken on both sides then remove from the ban.

Fry a sliced onion until it becomes translucent then add 4 diced garlic cloves and fry for a minute or two. Add 2 heaped teaspoons ras el hanout seasoning, 1 teaspoon of chilli flakes and fry on a low heat for 2 minutes.

Dice 2 Preserved lemons, half a handful of soft apricots and add into the pot along with 2 tins of tomatoes, a tin of drained chickpeas, half a litre of chicken stock and a cinnamon stick.

Bring to the boil then simmer until thickened. Add the chicken breasts and then cover on a high heat for 5 mins then uncovered on a simmer for 10.

Pour the left over juices of the chicken on top of the couscous then add boiling chicken stock so it sits about 2cm above. Cover for 5-10 mins then fork to make it fluffy. Season with salt then serve the chicken on top of the couscous and garnish with chopped Coriander.

Posh cheese on toast for late night snacks 🀀🀀🀀 absolute dream….How to below πŸ‘‡

1 Red Onion
1 Roasted red pepper (we use jarred)
2 Finger chillis
1 Red chilli
2 sun-dried tomato’s (jarred again)
Brown sugar
Balsamic vinegar
2 Bay leaves
Uncut sourdough loaf
Cheese (we use plain cheddar)
Crème Fresh
2 egg yolks

Dice a red onion and fry until it starts to caramelise. Whilst it's frying, chop a roasted red pepper, 2 finger chilli's, 1 red chilli and 2 sundried tomatoes and then mix together and add to the onions. Add 2 heaped teaspoons of brown sugar, 1/3 of a bottle of balsamic vinegar. Add 2 Bay leaves, bring to the boil and then simmer for 20-25 mins or until thickened to a jam texture.

Whilst the jam simmers, grate Cheddar cheese and mix with a tub of creme freche, salt, pepper and 2 egg yolks.

Slice your sourdough bread and toast both sides under a grill. Once toasted spread the jam on top and then lots of the cheese mixture. Don't worry if it goes over the sides, this is what you want.

Grill until nice and golden.

Pea, Mint and Feta Quesadillas
Quick and east to make and they are delicious and so light.

Chop or grate onion/shallot. Then fry in olive oil with diced garlic, 2 chopped red finger chilli's and a deseeded jalapeΓ±o chilli. Add a bowl of defrosted or semi defrosted garden peas, add a big handful of chopped mint and equal amounts of chopped Coriander and stir on a low heat.

Add half a block of chopped feta and then remove from the hob and then squeeze the juice of a lime on top and mix well. Take a potato masher and squash the mixture slightly so it spreads better on your wraps.

Place another large pan on a medium heat, place a Tortilla wrap in the pan, add grated Cheddar to half of the wrap, spoon the pea mixture on top and then fold the other half of the wrap over and press down slightly.

Continue to turn until both sides of the wrap are toasted to your liking.

Serve with salad, salsa and Soured cream.

For an added twist grate the zest of a lime into the Soured cream and squeeze the juice in as well, stir and serve with your quesadillas.
