Posh cheese on toast for late night snacks π€€π€€π€€ absolute dreamβ¦.How to below π
1 Red Onion
1 Roasted red pepper (we use jarred)
2 Finger chillis
1 Red chilli
2 sun-dried tomatoβs (jarred again)
Brown sugar
Balsamic vinegar
2 Bay leaves
Uncut sourdough loaf
Cheese (we use plain cheddar)
Crème Fresh
2 egg yolks
Dice a red onion and fry until it starts to caramelise. Whilst it's frying, chop a roasted red pepper, 2 finger chilli's, 1 red chilli and 2 sundried tomatoes and then mix together and add to the onions. Add 2 heaped teaspoons of brown sugar, 1/3 of a bottle of balsamic vinegar. Add 2 Bay leaves, bring to the boil and then simmer for 20-25 mins or until thickened to a jam texture.
Whilst the jam simmers, grate Cheddar cheese and mix with a tub of creme freche, salt, pepper and 2 egg yolks.
Slice your sourdough bread and toast both sides under a grill. Once toasted spread the jam on top and then lots of the cheese mixture. Don't worry if it goes over the sides, this is what you want.
Grill until nice and golden.
