A pioneer, leader and respected authority in the cheese industry, Kristen has spent over 15 years immersing herself in the techniques and flavours of the ancient art of cheese making. Kristen’s cheese is in great demand, supplying the likes of Ester, Fred’s and Aria and has been a regular stallholder for some years at Carriageworks. Her recipes have been featured in various food magazines and publ

ications including Gourmet Traveller & Cornersmith’s first cookbook. In 2018, Kristen was nominated for a Delicious Produce award, a testament to her philosophy of slow, carefully hand crafted cheese, using only high quality ingredients. Her buttermilk ricotta has a cult-like following around Sydney and is revered Australia-wide. Establishing herself in the echelons of the food world and as one of Australia’s leading cheese educators, she is a regular teacher at Cornersmith, Daylesford Longhouse and Moonacres cooking school. One of her most prized achievements in 2018, when she was asked to present at the feminist talks and ideas festival ‘All About Women’, becoming the first person to make cheese at the Sydney Opera House.

And I’m super excited to be heading up to the Cairngorms again soon, to one of my favourite places in Scotland . I’ll be teaching a couple of cheese making workshops in their beautiful tipi in the woods. Dates are:

4th June - Feta, halloumi and mascarpone
6th August - Mozzarella, burrata and stracciatella

And coming up in November at the Dell, an Autumnal food retreat! This will be a 4 night, cheese making and cooking class extravaganza with all meals and accommodation included. Well hello, Spring! What a wonderful time of year to be making cheese. The cows are back out on lush pasture, bringing an abundance of beautiful milk, alongside plenty of vibrant spring produce for our workshop lunches.

There are still a few dates available for my Edinburgh workshops:

Feta, halloumi & mascarpone – 26 April, 13 June
Yoghurt, butter & fresh cheese – 16 May
Mozzarella, burrata & stracciatella – 23 May, 21 June

A quick reminder: each workshop is a full day of hands-on cheesemaking, a delicious feast of seasonal produce, and you’ll take home all the cheese you make.

First class back in Scotland, and what a gorgeous Easter Saturday it was. The sun was shining, there was that unmistakable shift in the air as spring approaches, and the whole day carried such a lovely energy.

We spent it making mozzarella and burrata, lots of fun, plenty of laughs, and some truly beautiful cheese to show for it. Spring milk from gave us an abundance of silky, glossy curds.! ♥️🙏🏻

Day two of our cheese making extravaganza was all about stretched curd cheeses. We made mozzarella, burrata and stracciatella and continued our journey of discovering all the delicious ways to incorporate our curds and whey.

The stars of the weekend (for me anyway) were the ragu bianco, fig leaf wrapped buttermilk ricotta, a whipped ricotta and mascarpone dessert with pistachio and apricots and ALL those gorgeous tomatoes from the Longhouse garden 🪴🍅

What a glorious weekend it was and a wonderful start to a few months of teaching again in Australia. Thank you to everyone who came and shared the joy!

It was a bit of a whirlwind, teaching 5 workshops in 3 weeks, but I had the most wonderful time back in Victoria. I’ve got some many beautiful photos to share with you over the next few days, now I have a bit of down time.

First up, I taught a two day cheese making workshop . Day one was all about the essentials - yoghurt, cultured butter, crème fraiche, mascarpone, cultured butter and buttermilk ricotta. We also made focaccia and learnt all about the marvellous things you can do with the leftover whey, as well as enjoying a delicious feast.

It was an incredible day, spent with wonderful like minded souls. Heart full. And it was exciting knowing we had a second day of cheese making and cooking ahead of us. 🙏🏻♥️

Next week I’ll be back in Australia for a wee holiday and to teach a series of workshops at some of my favourite cooking schools.

I’m super excited to be heading back to one of my favourite places to catch up with my dear friends, Ronnen and Trace, and to teach a two day cheese making and cooking extravaganza masterclass.
Day 1 - cheese making essentials
Day 2 - mozzarella, burrata and stracciatella

I’ll also be sharing lots of recipes, as well as cooking up a sumptuous feast. You have the option to join for one day or why not come for both?!
I can promise you it’s going to be a superb weekend of beautiful cheese, delicious food, in a magical environment.

Such a beautiful start to 2026 with back-to-back workshops in Edinburgh last weekend. It was a frosty few days after a big dump of snow in Scotland, but we kept the fires burning while stretching our curds - and as you can see, some pretty stunning cheese was made.

My last cheese making class for the year is next Sunday 14th December, at Elliott’s in Edinburgh, and it’s going to get a little festive, naturally. We’ll be making feta, halloumi and mascarpone and I’m sitting here dreaming up a delicious menu for lunch, to celebrate the silly season. There are a few tickets left, if you’d like to join me!!
