A spicy margarita with no hangover and it’s good for your gut - yes please!!

As promised, my homemade stock cube recipe 👇🏻

1- Put your vegetables, aromatics, salt and peppercorns in a saucepan.

2- Add your bones (I use chicken bones and skin from my filleting but you can use the bones and leftovers from your Sunday Roast or use chicken wings).

3- Cover with water; bring to the boil and then simmer for 3 hours (no lid)

4- Remove from the heat; strain and then return the liquid to the hob for another hour (boil and then simmer).

5- Allow to cool; skim fat (personal preference!) and pie in ice cube trays. They’ll solidify in the fridge but last longer in the freezer.

Frozen vegetables- are you a lover or a hater?

I love some (like this stir fry mix from ) but am not a fan of others (broccoli 🤢).

What are your freezer staples when it comes to vegetables??

Making your own pesto is simple and delicious 👇🏻

Take your greens: basil, kale, parsley, rocket, watercress, radish or various tops …

Then add your nuts: pine, cashew, walnut …

And then plenty of olive oil, salt, Parmesan and some lemon juice.

For this, I measure with my heart 💚 and it always tastes delicious.

When you fancy something lighter and fresher 🥬

Try your usual bolognsise in a lettuce leaf; I lined mine a harissa yogurt I made (just combine your favourite harissa paste with some natural yogurt) and then topped with some Parmesan - delicious 😋

Save those bones and skin for stocks and soups.

I always have a bag of chicken bits in the freezer; I save them until I have a few and then I pop them in a big pot (or slow cooker) to make soup or stock.

My version of the viral chopped sandwich - it’s worth all that chopping!!

And if you are looking to up your protein, you can ceramic much more in your sandwich like this!!

And there is no end to the flavour combos: next time, I’m going to give salmon, cream cheese, capers and cucumber a try!

Sunday meal-plan and prep done ✔️ And yes, I’m off to Buckingham Palace on Friday for a garden party to celebrate my daughter’s gold DofE 🥇

I wrote my plan on a Wednesday (and send to my members) and then make sure I have all necessary ingredients by Sunday.

Taking a little bit of time out of my Sunday makes for a much easier week. I am able to make much more mindful food choices and l limit the amount of ultra processed foods we eat.

And now it’s all done, I can enjoy Sunday (which involves Devil Wears Prada 2) feeling prepared about the week ahead 🫶🏻

When I started this page in 2016, I always posted my weekly meal-planning board.

I wanted to inspire others to plan their meals and encourage them to cook from scratch.

This desire was born out of dad’s terminal cancer diagnosis; my brother’s similar diagnosis a year later heightened my desire and then my other brother’s fatal heart attack in 2019 motivated me to launch my business.

A friend asked me yesterday why I’d stoped posting my board: she said her and her friends missed it: so here it is.

The meals we’ll be eating next week and the meal-prep I did today to make sure it all runs smoothly.
