🌶️💃 FULL FAT FAJITA FRIYAY… YOU KNOW I LOVE YA! 💃🌶️

It’s Friday, the working week is DONE, and we’re bringing a little Mexican fiesta to the kitchen! 🇲🇽🎉

Tonight’s menu? Oh, it’s a good’un! 😍

🌶️ Homemade fajita seasoning – freshly blitzed in the Thermomix because why buy a packet when you can make your own?!

🍗 Sizzling chicken fajitas – juicy chicken, colourful peppers, onions and plenty of flavour, all wrapped up in a lovely soft tortilla!

🥑 Homemade guacamole – because fajitas without guac should frankly be illegal! 🤣

🍹 Frozen margaritas – because it’s Friday, I’m on a few days leave and quite frankly, I deserve one! Or two… who’s counting?! 😜

And the trusty Thermomix TM7 has been earning its keep again, helping with everything from the spice mix to the fajita filling, guacamole and those rather fabulous margaritas! 💚

Less faffing, more flavour and more time to enjoy the evening. What’s not to love?!

Now, if you’ll excuse me, I’ve got a margarita that’s not going to drink itself! 🍹🤣

🍛😍 FAMILY FAVOURITE ALERT! 😍🍛

✨ Murgh Makhani (Butter Chicken) with homemade Garlic Naan ✨

Honestly, is there anything better than a cracking curry made from scratch in your own kitchen?! 🤤❤️

Toasted spices, a rich, velvety butter chicken sauce and warm, garlicky naan to mop up every last drop. Absolute heaven!

And here’s the beauty of making it at home with my Thermomix… 💚

🍞🍗 It’s been another busy (and delicious!) week in my Thermomix world! 💚✨

Chicken Pizzaiola, steamed rice and freshly baked rolls are just a few of the delights my family have enjoyed this week. 😋

But the fun didn’t stop at home! We held a fabulous bread-making workshop in Skirling, where we got our hands doughy and created a wonderful variety of goodies, including gluten-free rolls and a savoury bread and butter pudding.

I’m still trying to get my head around the word savoury being in the same sentence as bread and butter pudding! 😂

We also whipped up a delicious dip, sun-dried tomato butter (and plain butter too!), plus a berry curd. Because let’s face it, if you’re making all that bread, you need a few things to spread on it! 🤤

I also took along a homemade malt loaf and angel cake, both of which went down a treat. The lovely feedback was the icing on the cake… quite literally! 🥰❤️

And now for this week’s top tip… 🤣

I sliced my malt loaf and popped it in the oven to keep it safe from my pesky cat. What I didn’t realise was that the oven was still switched on! 🤦‍♀️

The result? A slightly crispy malt loaf around the edges… which everyone absolutely loved!

So there you go, folks — accidental baking innovation at its finest! 😂🔥

From everyday family meals to experimenting at workshops, the Thermomix keeps surprising me with what it can do. And the best bit? There’s always something new to make, learn or laugh about. 💚

🌶️✨ Tonight’s dinner started off all sensible… and then the edible glitter came out. 😂

A big bowl of warming vegetarian chilli, topped with homemade guacamole and an über-generous dollop of sour cream — because nobody needs that kind of restraint in their life. 😋

Rich, comforting, packed with flavour and exactly the sort of dinner you want when the evenings are getting decidedly chillier. 🍂

And then there was dessert…

🤍 Creamy panna cotta
🍓 A scattering of freeze-dried strawberries
✨ And edible glitter because…

Well, quite frankly, why WOULDN’T you put glitter on a panna cotta?! 😜🤣

Another night of the Thermomix turning fairly everyday ingredients into something that feels like a proper little treat. ❤️

Healthy-ish main course ✔️
Homemade guacamole ✔️
Ridiculous amount of sour cream ✔️
Dessert ✔️
Unnecessary-but-absolutely-necessary glitter ✔️✨

Balance. It’s all about balance. 😂

🐟🥦 I think we may finally have reached peak carbohydrate… 😂

With my other half preparing for the Glasgow Half Marathon, our dinners lately have been somewhat… carb enthusiastic. 🍝🥔🍞

So tonight it was genuinely lovely to change things up with something lighter, fresher and absolutely packed with flavour. 🥰

Tonight’s Thermomix offering was Indian-style Fish with Yoghurt Sauce, Potatoes & Vegetables — and this one is DEFINITELY going on the make-again list! ❤️

The fish is wrapped in a parcel with a beautifully spiced spinach paste, then gently steamed while the Thermomix gets on with the rest of the meal.

And this is where steaming really comes into its own… 🙌

🥕 The carrots still had that lovely little crunch
🥦 The broccoli was beautifully vibrant rather than cooked into submission 😂
🥔 The potatoes were perfectly soft
🐟 And the fish was tender and delicately flavoured

Then you bring everything together with that gorgeous yoghurt sauce. 😋

The flavours aren’t overpowering or blow-your-head-off spicy — they’re subtle, fragrant and just a little bit different, complementing the fish rather than hiding it.

And, once again, it’s one of those meals that demonstrates just how clever the Thermomix is at cooking several elements of dinner at the same time.

Less juggling pans.
Less hovering over the hob.
Less washing up.

And considerably fewer carbohydrates than we’ve seen around here lately. 😂🙌

Highly recommend giving this one a try! 🥰

Ps: I also whipped up some Panna Cotta for tomorrow night but that’s a different post for a different day! 😜
