Can’t recommend this enough! Me, my wife and two of our friends were lucky enough to be chosen to try out Brendan White - Private Chef valentines menu, we all couldn’t quite believe what we was tasting, every single thing on the menu was outstanding. Brendan is definitely a master of his craft!

Fed up of dry Turkey?

WET BRINE IS THE KEY 🔑

- Turkey Breast, remove skin.
- Remove soggy layer underneath the skin.
- Pour water into a container (make a note of how much) enough to cover turkey breast.
- Pour and mix in 5% salt of total water weight.
- Add bay leaves, peppercorns and garlic cloves.
- Place turkey breast in to container (with lid)
- Put in fridge and Leave for 24 hours (don’t go over as it will become mushy)

Cooking the turkey.

- Remove Turkey from brine and pat down so not wet.
- Season with some coarse pepper and garlic powder (don’t go crazy) no salt!
- Set oven to 170C
- Cook for 40 mins per KG
- Remove from heat when turkey is 67C or above, it will carry on cooking whilst it’s resting, it will take to 74C and above which is perfect.

Today is hopefully the first of many collaborations with Craft Brewed - Come along and grab a pork pulled Bun and and choose from a great selection of craft beers! 25 Buns available.

We are the only location in Maidstone offering smoked BBQ.
