At the age of 15, Komal became a thriving and prospering food tester for the family establishment. Her appetite for cooking, flavor, texture, and plating has helped her to achieve this important milestone, and she used her astounding talent to develop the very best of traditional Gujarati dishes also known as “Kathiyawadi Food” which are still being served by many contemporaneous Indian restaurants. Komal has chosen to extend 'The Highway' to the United Kingdom with traditional food along with North Indian dishes & twist in chaats extensively refined by the inclusion of healthy ingredients with vegan-friendly options. Her work is central to every meal that The Highway proudly prepares, including but not limited to the selection of the very best ingredients, preparation, and blending of self-made spices.
