The Ultimate Crêpes Suzette 🥞

Looking for the perfect weekend treat? Bring a classic French dessert straight to your kitchen with this recipe

For the Crêpe Batter:250g flour, 50g sugar, 50g melted butter, 3 eggs, 450ml milk, 1 tbsp vanilla, flavoring, 1 pinch of salt

For the Suzette Sauce:

100g sugar

65g butter

Juice of 2 oranges

Juice of 1 lemon

Zest of 1 orange

Chef’s Tip for Tender Crêpes: Replace a small part of the milk with freshly squeezed orange juice and add a pinch of fine salt. It makes the batter incredibly flavorful and the crêpes much softer!

INSTRUCTIONS

Step 1: The Batter

Mix the flour, sugar, and salt in a bowl.

Add the eggs and whisk gently.

Gradually pour in the milk while whisking to avoid lumps.

Add the melted butter and vanilla.

Let the batter rest for 30 minutes.

Step 2: Cook the Crêpes
6. Heat your pan with a little butter.
7. Pour a ladle of batter and spread it by tilting the pan.
8. When the edges lift, flip the crêpe.

Step 3: Finishing & Sauce
9. Melt the sugar over medium heat until you get a light caramel.
10. Add the butter and mix gently.
11. Fold your cooked crêpes into quarters.
12. Place them into the hot sauce to coat well, turning them over gently.
13. At the end of cooking, transfer the caramel to a bowl, then add the orange juice and zest to pour over the crêpes.
14. Serve immediately! 🎉
