Nothing beats the smell of fresh bread! 🥖🌿

Carr's Flour’s rosemary & sea salt focaccia is a simple bake that’s perfect served alongside dinner or sliced up for lunch sandwiches.

With just a handful of ingredients, you can make your own golden, fluffy focaccia at home.

Full recipe below 👇

Ingredients:
• 475g strong white bread flour
• 350ml lukewarm water
• 1 tsp caster sugar
• 1½ tsp salt
• 7g fast-action dried yeast
•2 tbsp extra virgin olive oil

To finish:
• 3 tbsp extra virgin olive oil
• Fresh rosemary leaves
• Sea salt flakes

Method:
1. Add the water, oil, sugar and yeast to the bowl of a stand mixer.
2. Add the flour, followed by the salt. Make sure the salt doesn’t come into direct contact with the yeast, as this can affect the proofing.
3. Knead the dough on a high speed for 5 minutes.
4. Leave to prove in a warm place for 2 hours, or until doubled in size.
5. Transfer the dough onto a large baking tray and flatten it down with your hands.
6. Drizzle the dough with oil and use your fingers to make dimples in the dough. Add the fresh rosemary leaves and sprinkle the sea salt flakes all over the focaccia.
7. Leave the dough to prove in a warm place for a further 2 hours.
8. Bake at 200oC until golden and cooked through.

A nostalgic bake for back-to-school season! 🍫 Doves Farm

September is the perfect time to get back into the kitchen and make a batch of classic millionaire’s shortbread. Buttery shortbread, a delicious caramel layer and a generous coating of chocolate make these the ultimate afternoon treat.

Make a batch at the weekend and have a homemade treat ready for the week ahead.

Ingredients:
For the shortbread:
• 150g butter, plus extra for greasing
• 75g caster sugar
• 250g plain white flour

For the caramel:
• 100g butter
• 50g sugar
• 400g condensed milk

For the chocolate topping:
• 150g milk chocolate
• 100g plain chocolate
• 25g butter

Method:
1. Make the shortbread: Grease an 8 x 12"/20 x 30cm baking tray with butter and preheat the oven to 180°C.
2. Beat the butter and sugar together until light and fluffy.
3. Add the flour and mix until it forms very fine breadcrumbs or a light dough.
4. Tip the mixture into the prepared tray and spread into the corners. Smooth the top with the back of a spoon and prick all over with a fork. Bake for 20 minutes, then leave to cool.
5. Make the caramel: Add the butter, sugar and condensed milk to a saucepan. Bring to the boil, then simmer gently for 15 minutes, stirring continuously.
6. Remove from the heat and spread the caramel over the cooled shortbread. Leave to cool completely.
7. Make the chocolate topping: Break the milk and plain chocolate into small pieces and place in a bowl with the butter. Melt gently until smooth.
8. Spread the chocolate over the cooled caramel. Drag the back of a fork across the chocolate to create lines, then leave to set.
9. Cut into squares and store in an airtight tin.

Bring the fiesta home! 🌮🇲🇽

Planning a Mexican-inspired night in? These beef & cheese empanadas are the perfect centrepiece for a table full of sharing dishes. Golden pastry, a savoury beef and cheesy filling, plus salsa, sour cream and guacamole for dipping 🥑 Ready to be on the table in under an hour!

To make the pastry:
• 250g plain flour
• Pinch of salt
• 140g chilled butter, diced
• 2 egg yolks
• 3 tbsp very cold water

For the filling:
• 300g minced beef
• 1 small onion, chopped
• 1 garlic clove, crushed
• ½ tsp ground cumin
• ½ tsp paprika
• ½ tsp oregano
• ½ tsp chilli powder
• 1 tbsp tomato purée
• 100g grated strong hard cheese
• 1 beaten egg, for glazing

Method:
1. Sift the flour and salt into a bowl, add the butter and rub together until the mixture resembles breadcrumbs.
2. Mix the egg yolks with the cold water, then stir into the flour mixture until the pastry comes together. Shape into a disc, wrap and chill.
3. Preheat the oven to 200°C.
4. Fry the beef, onion and garlic until cooked and softened. Add the spices and tomato purée and cook for 2 minutes. Allow to cool, then stir through the cheese.
5. Roll out the pastry to the thickness of a £1 coin and cut into around 12 discs.
6. Add a tablespoon of filling to each, brush the edges with beaten egg, fold into a half-moon and crimp with a fork. Brush with more egg.
7. Bake for 12–15 minutes until golden.

Looking for an easy summer bake that everyone will love?

Our summer berry chocolate traybake is ready in just 45 minutes, making it perfect for last-minute entertaining. Rich chocolate sponge is topped with fresh, seasonal berries to create a colourful centrepiece that's ideal for summer garden parties, family gatherings or simply making the most of berry season.

Ingredients:
• 175g self-raising flour
• 150g light brown sugar
• 50g cocoa powder
• 1 tsp bicarbonate of soda
• 2 eggs
• 150ml milk
• 150ml oil (vegetable or sunflower)
• 450ml double cream
• Berries: we used strawberries, blueberries, raspberries and cherries

1. Preheat the oven to 160°C (fan) and line the traybake tin with baking parchment.
2. In the mixing bowl, fully combine the flour, sugar, cocoa powder and bicarbonate with the whisk before adding the milk, eggs and oil.
3. Mix everything together to form a smooth batter, then pour into the lined traybake tin. Place in the oven on the middle shelf and bake for 25-30 minutes until springy in the centre.
4. Allow the sponge to cool before removing from the tin.
5. Whip the cream to soft peaks, swirl on top of the cooled sponge and top with your preferred berries just before serving.

These raspberry buns are wonderfully soft and crumbly, filled with your favourite jam and perfect served alongside a cup of tea.

Ingredients:
• 225g self-raising flour
• 115g margarine or butter
• 115g caster sugar
• 1 egg, beaten
• 3 tbsp milk
• 4 tbsp jam

Method:
1. Preheat the oven to 190°C.
2. Rub the margarine or butter into the flour using your fingertips until the mixture resembles fine breadcrumbs.
3. Stir in the caster sugar.
4. Make a well in the centre and add the beaten egg and milk. Mix until a soft dough forms.
5. Divide the dough into 12–14 small balls and place onto a lined baking tray.
6. Using your thumb or the end of a wooden spoon, make a small indentation in the top of each bun and fill with a little jam.
7. Bake for 15–20 minutes, until lightly golden.
8. Transfer to a wire rack and allow the jam to cool before serving.

Nothing beats a homemade Cornish pasty 🥧

Wrapped in a crisp, golden pastry and filled with a traditional mix of beef, potato, turnip and onion, they're perfect for picnics, packed lunches or enjoying fresh from the oven. Delicious Neill's Flour!

Ingredients:
• 100g self-raising flour
• 500g strong white bread flour
• 120g lard
• 125g butter
• 1 tbsp salt
• Cold water (to bring the dough together)

For the filling:
• 400g good-quality beef skirt (diced)
• 300g potato (peeled and diced)
• 150g turnip (peeled and diced)
• 150g onion (peeled and diced)
• Salt and black pepper
• 1 beaten egg (for glazing)

Method:
1. Add the salt to the flour in a large mixing bowl. Rub in the lard and butter until the mixture resembles fine breadcrumbs.
2. Gradually add cold water until the dough comes together, then knead for 5–10 minutes until smooth and elastic. (This can also be done using a mixer.)
3. Wrap the pastry in cling film and chill in the fridge for 3 hours. This resting time is essential and makes the pastry much easier to roll.
4. Roll out the pastry and cut into circles approximately 20cm in diameter.
5. Divide the potato, turnip, onion and beef between the pastry circles, layering the vegetables and meat and seasoning generously with salt and pepper.
6. Fold the pastry over the filling and crimp the edges to seal.
7. Brush each pasty with beaten egg.
8. Bake in a preheated oven at 165°C for 50–60 minutes, until the pastry is beautifully golden and crisp.

Ingredients:
• 100g Mortons Self-Raising Flour
• 100g caster sugar
• 100g softened butter
• 2 large eggs
• 1 tbsp milk

For the buttercream:
• 50g softened butter
• 75g icing sugar
• 2 tbsp strawberry jam
• Icing sugar (for dusting)

Method
1. Preheat the oven to 190°C and line a muffin tin with 10 paper cases.
2. Place the sugar, butter, eggs, flour and milk into a large bowl and beat with an electric whisk until pale and creamy.
3. Divide the mixture evenly between the paper cases.
4. Bake for 15–20 minutes, until risen, golden and firm to the touch.
5. Transfer to a wire rack and leave to cool completely.
6. To make the buttercream, beat together the softened butter and sifted icing sugar until smooth.
7. Slice the top from each cake and set aside. Fill each cavity with a spoonful of buttercream and a little strawberry jam.
8. Cut each cake top in half and arrange the two pieces on top to create butterfly wings.
9. Finish with a light dusting of icing sugar before serving.
