A glorious weather ☀️☀️☀️ finally! This complete meal (or complete salad because it is served cold) is all you need these days.
➡️ Ingredients and method (6 servings)
• 200g tempeh (cubed into small pieces, then coated with 1 tbsp tamari sauce, 1 tsp date syrup, 1/2 tsp garlic granules, 1/2 tsp smoked sweet paprika, 1/2 tsp ground ginger, 1 tsp neutral oil - then air fried for 15 minutes at 200°C, stirring occasionally)
• 400g tin cannellini, drained : 240g
• 150g small pasta, I used gnocchetti sardi. Cook according to instructions and cool it with cold water immediately when draining.
• 2 large carrots (cooked and then cut into medium to small pieces)
• 1 broccoli (steamed and then cut into pieces)
• 1 cucumber, chopped
• 4 tomatoes, chopped
Combine all the above ingredients. Then proceed with the dressing:
• 1 avocado
• A handful of mint leaves
• A handful of parsley leaves
• A handful of chives (or spring onions)
• 4 tbsp unsweetened soy yoghurt
• The juice of 2 lemons
• About 1/2 cup of water (you start with a bit less)
• 1 tsp extra virgin olive oil
• About 1/2 to 3/4 tsp salt, or to taste.
Blend the ingredients for the dressing and then pour over the previous mix, combining well and adding black sesame seeds to finish the dish.
