A glorious weather ☀️☀️☀️ finally! This complete meal (or complete salad because it is served cold) is all you need these days.
➡️ Ingredients and method (6 servings)
• 200g tempeh (cubed into small pieces, then coated with 1 tbsp tamari sauce, 1 tsp date syrup, 1/2 tsp garlic granules, 1/2 tsp smoked sweet paprika, 1/2 tsp ground ginger, 1 tsp neutral oil - then air fried for 15 minutes at 200°C, stirring occasionally)
• 400g tin cannellini, drained : 240g
• 150g small pasta, I used gnocchetti sardi. Cook according to instructions and cool it with cold water immediately when draining.
• 2 large carrots (cooked and then cut into medium to small pieces)
• 1 broccoli (steamed and then cut into pieces)
• 1 cucumber, chopped
• 4 tomatoes, chopped

Combine all the above ingredients. Then proceed with the dressing:
• 1 avocado
• A handful of mint leaves
• A handful of parsley leaves
• A handful of chives (or spring onions)
• 4 tbsp unsweetened soy yoghurt
• The juice of 2 lemons
• About 1/2 cup of water (you start with a bit less)
• 1 tsp extra virgin olive oil
• About 1/2 to 3/4 tsp salt, or to taste.

Blend the ingredients for the dressing and then pour over the previous mix, combining well and adding black sesame seeds to finish the dish.

When you need a really quick meal that is delicious, healthy (no strange ingredients), and high in protein… the express range tick all the boxes!
1. Cauldron Express Oregano and Thyme Grillable Tofu. I made a delicious sandwich: homemade hummus, avocado, a slaw, a some slices of this tofu after being in the air fryer for 5 minutes (200°C)
2. Cauldron Express Smoky BBQ Grillable Tofu: slices were stir fried with vegetables, perfect with arepas!
3. Cauldron Express Teriyaki Marinated Tofu Pieces: the pieces are stir fried with peppers, cavolo nero, carrots and a slurry with corn starch and soy sauce over rice. Yummy!
4. Cauldron Express Garlic & Ginger Marinated Tofu Pieces: another stir fry with the tofu pieces, mangetout, carrots, and sesame seeds over rice. My favourite!

So easy, you can use just one arm 🤣 (but it’s true!). Glass noodles, which you just need soak in boiling water for 3 minutes. Add vegan furikake. Soft tofu, add tamari sauce, sesame seeds and spring onions. Steamed pak Choi to complete the mail, and squeeze half lemon on it.
It’s so good!

Today is warm and sunny so it’s tabbouleh salad (recipe 8 posts below) with chickpeas, a bit more of lemon and 1/2 tsp of smoked sweet paprika. Sooo good and refreshing!

I love the fresh touch of lemon and the character of capers for this recipe. Ground almonds for the silky finish. The crunchy tofu on top adds a bit of fun and a contrast of flavours and texture. Here the ingredients for 280g of spaghetti (4 servings as a primo piatto), 2-3 servings as main meal. It goes well with steamed tender broccoli as a side.
➡️ For the sauce
3 large garlic cloves, crushed
Juice and zest of 1/2 lemon
3 tbsp ground almonds
2 heaped tsp capers, chopped
A handful of parsley
Salt
1 1/2 tbsp olive oil
————-> sauté garlic in oil for just 1 minute add the other ingredients and immediately the pasta and a ladle or 2 of the pasta water

➡️ For the crunchy tofu on top
About 4 tbsp of crumbled firm tofu
1/2 tbsp tamari sauce
1/2 tsp smoke paprika
A squeeze of date syrup
A drizzle of oil
——-> 200°C 10-12 minutes air fryer

This is my kind of savoury light breakfast: miso soup! And a very simple one with:
• spring onions
• red pepper
• carrots
• wakame seaweed
• firm tofu
• sesame seeds
• unpasteurised miso paste

Always add the miso (1 heaped tsp per person) when you turn off the heat. I’m using today a deep red fava miso from , which is so good!
Why a light breakfast? Well, today I’m going out to have a big lunch ( ) with tiramisù included, but felt I needed something in the morning. Sometimes you don’t feel quite hungry but need a bit of something nourishing. Any reason you have, miso soup is fantastic!

Brunch at midday! Well, it’s the day we change to summer time so my body is still functioning with the winter time. It has: tofu scramble (200g medium firm tofu, sofrito and spices); half avocado with lemon juice; 2 tbsp sauerkraut; pea shoots, purple radish and garlic chives salad; sourdough pitta bread. I also ate 2 satsumas, nit in the pic. It’s still cold here, but at least it’s sunny ☀️

I mixed gluten flour and silken tofu, some liquid and spices, didn’t knead (otherwise it will become tough as a result), divided into 6 pieces and stretch each one quickly to about 1 cm thick, steamed the pieces for 30 minutes, and then waited for them to cool off. I combined all ingredients except the gluten using a food processor and then mix the gluten with that by hand.
I took 3 fillets to a container with some marinade to be used directly on a pan the following day; the other 3 pieces were into smaller chunks and also into a container to the fridge, a when used I cooked a sauce with onion, peppers, garlic, tomatoes, coriander, cumin, salt, and black pepper and added the pieces, which we used to fill arepas…The two versions are delicious and the texture is perfect, tender but with structure. Do you like seitan?
➡️ Ingredients
225g gluten flour
300g pack silken tofu (the one by , which is softer than other brands I have seen)
2 tbsp oat milk
2 tbsp nutritional yeast
2 tsp brown rice miso
1/2 tsp onion granules
1/2 tsp garlic granules

A beautiful sunny day for Mothering Sunday! I had papaya (a luxury for me here) with pineapple, and toast with air fried super firm tofu (salt, Italian herbs, and smoked sweet paprika) topped with a mix of parsley, red pepper, lemon juice and extra virgin olive oil. So happy!!!! ☀️☀️☀️🌸🌸

Friday pasta to get into the mood for the weekend!
➡️ Ingredients (4 servings)
150g cavolo vero, trimmed of the tough stems and cut into 1-2 cm slices
5 garlic cloves, finely chopped
3 tbsp ground almonds
3 tbsp nutritional yeast
Juice of half lemon
Some basil leaves
1/2 tsp dried oregano
A pinch of chilli flakes
Olive oil (a good splash)
Salt to taste
285g wholewheat pasta
➡️ Method
Boil your pasta according to package instructions. Add the chopped cavolo nero to a large saucepan with a bit of water and cook with the lid on for 5-6 minutes. When the water is evaporated, add olive oil and garlic, spices and salt, cook and stir for 2-3 minutes, then add some pasta water and put the lid on. When the pasta is ready, transfer to saucepan with a slotted spoon and add more pasta water as needed. Cook for an additional 2-3 minutes, adding the basil leaves, the lemon juice, and tossing through to get it silky. Creamy and nourishing!
