Simple Cheddar Jalapeño Cornbread

Ingredients:
1 cup cornmeal
1 cup flour
½ cup sugar
1 tbsp baking powder
½ tsp salt
1 cup milk
2 eggs
½ cup butter, melted
1 cup shredded cheddar
1-2 jalapeños, chopped
½ cup corn kernels

Instructions:

Prep: Preheat oven to 400°F (200°C) and grease an 8x8 inch pan or cast iron skillet.
Mix Batter: In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt. Pour in the milk, eggs, and melted butter, and stir until just combined (a few lumps are okay).
Add-ins: Fold in the cheddar cheese, jalapeños, and corn.
Bake: Pour batter into the prepared pan. Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean. Serve warm.

Ingredients:
1 box yellow cake mix
2 lbs fresh strawberries, sliced
¼ cup sugar
2 (3.4 oz) packages instant vanilla pudding
3 cups cold milk
1 (12 oz) container frozen whipped topping, thawed

Instructions:

Prep: Bake cake mix as directed in a 9x13 pan. Once cool, cut into 1-inch cubes. In a separate bowl, mix sliced strawberries with sugar and let sit for 20 minutes.
Make Filling: In a large bowl, whisk pudding mix and milk until it thickens. Fold in the thawed whipped topping until smooth.
Layer: In a large trifle or punch bowl, layer ⅓ of the cake cubes, ⅓ of the strawberries (with their juice), and ⅓ of the pudding mixture. Repeat two more times.
Chill: Cover and refrigerate for at least 4 hours (overnight is best) before serving.

Ingredients:
Topping:
3 tbsp butter, melted
⅓ cup brown sugar
6 pineapple rings
6 maraschino cherries (optional)
Donut Batter:
1 ½ cups flour
1 ½ tsp baking powder
½ tsp cinnamon & ¼ tsp nutmeg
½ cup mashed sweet potato
½ cup sugar
1 egg
½ cup milk
¼ cup butter, melted
1 tsp vanilla

Instructions:

Prep Pan: Preheat oven to 350°F (175°C). In a greased 6-cavity donut pan, add melted butter, then brown sugar to each cavity. Place a pineapple ring (and optional cherry) in each.
Make Batter: In a large bowl, whisk wet ingredients (sweet potato, sugar, egg, milk, melted butter, vanilla). In a separate bowl, mix dry ingredients (flour, baking powder, spices, salt). Add dry to wet and mix until just combined.
Fill & Bake: Spoon batter over the pineapple in the pan, filling each cavity ¾ full. Bake for 15-18 minutes, or until a skewer comes out clean.
Invert & Serve: Cool in the pan for 5-10 minutes before flipping onto a wire rack. Serve warm.

Ingredients:

4 white fish fillets (cod, tilapia, haddock, or your favorite)
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
2 tbsp olive oil
Salt and black pepper, to taste
For the Lemon Butter Sauce:
4 tbsp butter
2 tbsp olive oil
Juice and zest of 2 lemons
4 garlic cloves, minced
1 tbsp fresh parsley, chopped
Salt and black pepper, to taste

Instructions:

1️⃣ Prepare the Fish:
Pat fillets dry with paper towels. Brush both sides with olive oil, then season evenly with paprika, garlic powder, onion powder, salt, and pepper.
2️⃣ Cook the Fish:
Heat a large skillet over medium-high heat. Add the fillets and cook for 3–4 minutes per side until golden and flaky. Remove from skillet and set aside.
3️⃣ Make the Lemon Butter Sauce:
Lower heat to medium. Using the same skillet, melt butter with olive oil. Add garlic and cook for 1–2 minutes until fragrant. Stir in lemon juice, zest, and parsley. Season with salt and pepper. Let the sauce simmer gently for 2–3 minutes.
4️⃣ Serve:
Place fish on a serving platter, spoon the warm lemon butter sauce over each fillet, and garnish with extra parsley and lemon slices.

Ingredients:
Crust:
1 ½ cups graham cracker crumbs
¼ cup sugar
6 tbsp butter, melted
Filling:
3 (8 oz) packages cream cheese, softened
1 ½ cups sugar
¼ cup flour
1 tsp vanilla
½ cup sour cream
4 eggs
1 ½ cups chocolate chips
Topping:
1 cup salted caramel sauce
Flaky sea salt

Instructions:

Make Crust: Preheat oven to 350°F (175°C). Mix crust ingredients and press into a 9-inch springform pan. Bake for 10 minutes and let cool.
Make Filling: Beat cream cheese, sugar, and flour until smooth. Mix in sour cream and vanilla. Add eggs one at a time, mixing on low until just combined. Fold in chocolate chips.
Assemble & Bake: Pour half the batter into the crust. Drizzle with ½ cup caramel sauce and gently swirl with a knife. Top with remaining batter. Bake for 60-75 minutes, until the center is almost set.
Cool & Chill: Turn off the heat and let cheesecake cool in the oven with the door cracked for 1 hour. Then cool completely on a counter before refrigerating for at least 6 hours (or overnight).

Instructions:

Make the Pudding:
Whisk the instant chocolate pudding mix with cold milk in a bowl for about 2 minutes, until it thickens.
Fill the Crust:
Pour the pudding evenly into the prepared crust.
Chill:

Ingredients:

8 oz cream cheese

½ cup shredded coconut

2 tbsp powdered sugar

1 tsp coconut extract

1½ cups chocolate chips (melted)

Instructions:

Roll into balls. Freeze 30 minutes.
