This is always a banger every time I make it, and it has become one of my go-to quick recipes. The combination of palm oil, crayfish, iru, smoked mackerel and all those rich Nigerian flavours is just something else! ๐คค๐ฅ
๐ Ingredients
* Rice
* Palm oil
* Chopped onions
* Pepper mix
* Ground crayfish
* Seasoning powder
* Paprika
* Smoked mackerel
* Scent leaves
* Locust beans (iru)
* Shaki
* Stockfish
* Shredded chicken breast
* Kpomo
๐จ๐พโ๐ณ How I made it
I started by cooking the shaki, stockfish, chicken breast and kpomo until tender, then set them aside.
In a pot, I heated the palm oil and sautรฉed the chopped onions. I added the locust beans, pepper mix, ground crayfish, paprika and seasoning powder, then allowed everything to cook properly.
I added the cooked shaki, stockfish, chicken and kpomo, then stirred everything together.
Next, I added the rice and smoked mackerel, followed by the stock from the meat. I covered the pot and allowed the rice to cook until tender and properly infused with all those flavours.
Once the rice was fully cooked, I finished it off with freshly chopped scent leaves, gently mixed everything together and allowed it to steam for a few minutes.
