On popular demand Chicken Darbari recipe is back for my new followers! Thank you all for your messages! Enjoy!

My CHICKEN DARBARI

A rich, aromatic chicken curry made with a freshly roasted whole-spice blend, caramelised onions, tomatoes and cashews. The chicken is seared first for extra flavour, then finished gently in the sauce.

Note- This is one of those chicken curries where taking a little extra time with the preparation really pays off.

Cooks for 4 people
Time: 45 minutes
Spice : Medium to low

INGREDIENTS

For the spice mix

2 tbsp coriander seeds
2 tsp cumin seeds
1 tsp fennel seeds
5–6 green cardamom
1 inch cinnamon stick
2 cloves
½ tsp black peppercorns
2 dried Kashmiri red chillies, optional

Dry roast the whole spices in a pan over a medium heat for about 1 minute, stirring frequently, until fragrant. Do not let them burn. Remove from the heat and leave to cool completely before grinding to a smooth powder. Blitz a few times if needed.

For the chicken marinade

500-600g chicken thigh fillets
1 tbsp ginger and garlic paste
1 tbsp homemade spice mix
2 tbsp Greek yoghurt
1/2 tsp Salt

Mix everything together and leave covered in the fridge for at least 1 hour. If you have the time, marinating overnight gives even more flavour.

For the sauce

3 tbsp oil
3 medium white onions, sliced
3 tomatoes, coarsely chopped
2-3 cloves garlic, coarsely chopped
3-4 cashews
2 mild green chillies, optional
Remaining spice mix
1 tsp dried fenugreek leaves
100ml warm water

Fresh coriander, to garnish

METHOD

Start by making the sauce.

Heat the oil in a pan and add the sliced onions. Cook over a medium heat for 12-15 minutes, stirring regularly, until they are nicely browned and caramelised.

Add the garlic and cashews and cook for another minute.

Add the chopped tomatoes and cook until they have softened. Turn off the heat and allow the mixture to cool slightly.

Transfer to a blender and blend until smooth, adding 30- 50ml water to help it along.

Now cook the chicken.

Heat a little oil in the same pan, or use a fresh pan, and once hot, place the marinated chicken in a single layer. Cook over a high heat for 2-3 minutes on each side. This gives the outside a lovely sear and helps build flavour before the chicken goes into the sauce.

Lower the heat and add the blended sauce, coating the chicken well.

Add 50ml water, the remaining spice mix and salt. Cover the pan and cook gently until the chicken is completely tender and the sauce has thickened. You should see the curry bubbling gently, with a little oil appearing around the edges.

Finally, add the dried fenugreek leaves and mix through.

Switch off the heat and finish with plenty of fresh coriander.

MY TIP

For this curry, I prefer chicken thigh fillets or bone-in chicken.

The reason is simple: they can cook gently in the sauce for longer, allowing the chicken and sauce to develop more flavour together. Chicken breast cooks much more quickly and, if left simmering for too long, can become dry.

This is a curry where low and slow at the end is your friend.

Serve with rice, naan or roti and enjoy.

Chicken: 500g chicken, 60g yoghurt, ½ tsp salt, 1 tbsp ginger-garlic paste, juice of 1 lemon and 1 tbsp biryani masala.

Rice: 400g Tilda Pure Basmati Rice, cumin seeds, cardamom, cloves, bay leaf and cinnamon.
