Vegan Cauliflower Cheese

Directions:

Preheat your oven to 375Β°F (190Β°C).

Directions:

Preheat oven to 375Β°F (190Β°C) and prepare a baking sheet with parchment paper or lightly oil it.

Bubble and Squeak with Leftover Roast Beef

Ingredients:

2 cups mashed potatoes πŸ₯”
2 cups cooked cabbage πŸ₯¬
1/2 cup chopped cooked beef πŸ₯©

1 cup carrots or parsnips, cooked and chopped πŸ₯•
Salt and pepper to taste πŸ§‚
2 tbsp vegetable oil πŸ›’οΈ
1 tbsp butter 🧈

Directions:

In a large skillet, heat the vegetable oil over medium heat.
Add the chopped onion and sautΓ© for 2-3 minutes, or until the onion becomes translucent.
Combine the mashed potatoes, cooked cabbage, carrots or parsnips, and chopped beef in a large mixing bowl. Season with salt and pepper to your taste.
Add the mixture to the skillet with the onions and spread it evenly. Press down lightly to compact the ingredients.
Allow the mixture to cook undisturbed for about 4-5 minutes, or until the bottom is golden brown and crispy.
