Vegan Cauliflower Cheese
Ingredients:
1 large cauliflower π₯¦
2 tbsp olive oil or vegan butter πΏ
2 tbsp flour πΎ
2 cups plant-based milk π₯
1 tbsp nutritional yeast π
1/2 tsp turmeric π±
1/2 tsp garlic powder π§
Salt, pepper π§
1/2 cup vegan cheese (optional) π§
2 tbsp breadcrumbs π
Directions:
Preheat your oven to 375Β°F (190Β°C).
Cut the cauliflower into florets and steam them until tender, about 10 minutes.
In a separate pan, heat the olive oil or vegan butter over medium heat. Stir in the flour, creating a paste.
Gradually whisk in the plant-based milk, ensuring there are no lumps.
Add the nutritional yeast, turmeric, and garlic powder into the mixture. Season with salt and pepper.
Continue to stir until the sauce thickens, then add the optional vegan cheese, and stir until it melts.
Place the steamed cauliflower in a baking dish and pour the cheese sauce over the top.
Sprinkle with breadcrumbs for an extra crunchy texture.
Bake in the preheated oven for 20-25 minutes or until the top is golden and crispy.
Serve hot and enjoy the creamy, cheesy goodness without any dairy.
