A delicious twist on potage, made with soft, Irish potatoes and rich, spicy pepper sauce.🫶🏽
✨ Ingredients:
• 6–8 medium Irish potatoes (peeled, washed, and cut in chunks)
3 red bell peppers
2 scotch bonnets (adjust to spice level)
1 large onion (half for blending, half for frying)
• 3 cloves of garlic
1 thumb of ginger
1/4 cup crayfish (ground)
2 cooking spoons of palm oil (red oil)
2 seasoning cubes (Maggi or preferred brand)
Salt to taste
Water (enough to cook the potatoes)
👩🏽🍳 Step-by-Step Method:
1. Prep the Pepper Mix:Blend the red bell peppers, scotch bonnets, garlic, ginger, and half of the onion into a smooth puree. Set aside.
2. Heat the Palm Oil:In a large pot, heat your palm oil on medium heat. Add the remaining chopped onions and sauté until fragrant (about 1-2 minutes).
3. Cook the Pepper Sauce:Pour in the blended pepper mix. Let it fry for about 5 minutes until the sauce thickens.
4. Season the Sauce:Add crayfish, seasoning cubes, and salt to taste. Stir and let it simmer for another 2 minutes.
5. Add Water:Pour in enough water to cook the potatoes (about halfway up the pot). Stir and bring it to a light boil.
6. Add the Potatoes:Add your peeled and washed Irish potatoes into the pot. Stir gently to mix them with the sauce.
7. Cook Until Tender:Cover the pot and cook for about 10–15 minutes, or until the potatoes are soft and can be pierced with a fork.
8. Final Stir:Stir everything together gently, letting the sauce thicken slightly as it coats the soft potatoes.
9. Serve & Enjoy!Best served hot. You can enjoy it alone or pair it with fried plantains, boiled eggs, fish or chicken just like myself 😋
