Today I felt the need to rest my mind by cooking a variation of our favourite Greek Moussaka. In Greece, we call this dish “Melitzanes Papoutsakia” (Stuffed Eggplants). Both my grandmother and my mother used to make it. It’s comfort food with memories.

Ingredients
🍆 3 medium eggplants
🌻 6 tbsp sunflower oil

For the filling:
🥩 500g ground beef
🍅 4–5 small tomatoes
🧅 1 large onion
🧄 3 garlic cloves
🌻 5 tbsp sunflower oil
🧂 Salt
🧂 Pepper
🌿 Nutmeg
🌿 Cinnamon
🍃 2 bay leaves

For the béchamel sauce:
🧈 50g butter
🌾 50g flour
🧂 Salt
🧂 Pepper
🌿 Nutmeg
🥛 500ml milk
🥚 1 egg



Preparation

I’ve taken step-by-step photos of the whole process, and I’ll make videos later on if that’s more helpful.
1. Spread 3 tablespoons of sunflower oil in a small baking tray.
2. Wash and peel the eggplants as shown in the photo. Cut them in half lengthwise and scoop out a bit of the inside.
3. Add about half a tablespoon of sunflower oil, salt, and pepper to each half.
4. Bake in a preheated oven at 180°C for about 20 minutes.

Meanwhile…
In a shallow pot, heat 5–6 tbsp sunflower oil. Add the finely chopped onion and garlic and sauté until soft.
Then add the ground beef and stir well until it loses its juices and softens.
Add pepper, cinnamon, nutmeg, and cover the pot to let the meat absorb all its flavors.
Blend the tomatoes and add them to the pot along with some salt and a cup of water.
Cover and simmer until the mixture is thick and juicy but not dry. Stir occasionally and enjoy the amazing aromas!

Take the tray out of the oven and fill each eggplant half with a spoonful of the meat mixture (see photo).

To make the béchamel:
In a small pot, melt the butter. In a bowl, mix the flour with the salt, pepper, and nutmeg.
Add this to the melted butter and stir with a whisk.
After a few minutes, slowly add the milk while stirring continuously until you get a smooth cream.
Remove from the heat, let it cool slightly, and stir in the egg. Mix well to create a rich béchamel.
Pour the sauce over the meat mixture in each eggplant.

Bake at 180°C until the béchamel turns golden brown – about 40 minutes depending on your oven.

But his insight carries a deeper truth: food is not just fuel—it is connection, care, and presence.
This is why cooking our own meals is more than a practical act. It is a ritual of self-respect, a return to rhythm, a quiet reclaiming of our health and inner balance.
☘️The nourishment begins not on the plate—but in the hands that prepare it, in the scent of fresh herbs, in the intention with which we stir the pot.
💝The act of cooking is healing in itself. And in this gentle process, we remember that feeding ourselves is also a form of loving ourselves.

Dear friends,

You may know me through my food — but the most of you maybe not yet through my story.

My name is Paschalina, but if you call me Lina is easier! 😊
For the past two years, I ran Plakous – Greek Artisan Cooking & Baking.
It started as a small business born out of love for tradition and homemade nourishment.
But now, it’s time for a change — not in the heart of what I do, but in the purpose behind it.

You see, I’m not just someone who loves to cook.
For over 30 years, I’ve worked in tourism and hospitality, offering care, welcome, and connection to people from several countries.
I also hold an HND in Counselling & Psychology, and I’ve spent years studying Ancient Greek Philosophy.

Cooking, to me, is more than recipes — it’s presence. It’s grounding. It’s love.
Always, when I’m cooking, I catch myself smiling. My mind calms. My body softens. And I think,
“This is healing.”

That’s why this page is becoming “Nourish Within” — a space where food meets soul.
