I guess this one would have to be called purple haze. Purple heart and a hazy Hamon. This is my first successful attempt at a Hamon. The blade was made using 26C3 (spicy white) as this steel reacts well during the differential hardening. Basically clay was added to the top half of the blade to insulate in during the quench. This leaves the top half softer and with some polishing & etching to reveal the contrast especially along the barrier between hard cutting edge & softer spine. The purple heart wood revealed its purple colouring after exposure to UV. This one has an extra central pin going through the tang. Would be interested to hear people’s opinions on this build. Will be up on the website by the end of the week. Anyway back to work, got a list of 20 knives I’m trying to work my way through!

Here is a little paring knife made using Damasteel Drakkar pattern. This is my first time using Damasteel and as a steel it’s pretty hard to beat. Beautiful patterns, high performance powder metal steel with great wear resistance and stainless. What’s not to love?! have a bunch of paring & petty knives that I’m finishing up made from various patterns so watch this space. This one has some Tanglewood Richlite, which I think works great with this piece of steel. The coyote brown G10 central layer also adds a nice bit of extra contrast to the piece along with the brass pins.

This is the first full sized kitchen knife I’ve made using wrought iron clad San Mai from . I absolutely love the look of the wrought iron! I think this yellow stabilised maple burl compliments it nicely. The wrought iron is definitely prone to rust so tbh I wouldn’t be working with this stuff without Iron guard from KWB prior to a good coat of knife wax. Having spent years working primarily with stainless steel it’s taken me a while to figure out ways to create knives with these lovely materials with less hassle to keep looking good. Massive thanks to for the great steel and a proper way of preventing corrosion without the need for constant reapplying. Highly recommend his products to any other knife makers out there. His steel has really helped me up my game with the quality of what I am able to produce.

This Bunka was made using some of my favourite materials. This piece of Damascus San Mai from has an Apex Ultra core steel for a super wear resistant edge! The pattern on this steel speaks for itself. The Mun Ebony from although dark has some incredibly unique figure to it. My usual hidden tang frame handle construction is made with a G10 central layer and a buffalo horn bolster with 2mm black carbon fibre pins that are barely visible against the Mun Ebony. The faceted handle adds to the aesthetic, yet doesn’t detract from the comfort of the handle. I’m all about small iterations of improvement and there is still a relationship to my earlier work, though the progression should be obvious.

This is my first Gyuto made from the beautiful Dark Mai supplied by This piece of Lamtoro Burl was a nice contrast to the blackened blade. I do love the black & yellow combo! Facets on the handle add to the aesthetic, yet designed to be comfortable in any grip. This one is now up on the website along with the others from this recent batch. Built as a workhorse for professional and home chefs at nearly 8” long this blade will perform a variety of tasks.

Good things often come in small packages. I believe the petty really underestimated by most amateur and professional chefs. The big knives are fun and more often what people lust after. I do however believe that it’s hard to do everything with something larger and a good petty is the perfect accompaniment. This one is simple in shape and design, but with the beautiful dark mai from and some lovely curly sycamore from the materials speak for themselves.

This is a little break from the norm for me. I got this sample piece of Cu Mai from and didn’t want to waste the steel so this is what I came up with. This petty is little larger than most of mine at 150mm long and 44mm tall. I have to say I actually love this size, it feels like a 3/4 size Gyuto. The Cu Mai is so beautiful I had to pair it with something equally special and Snakewood is definitely one of my favourite exotic hardwoods! Matched up with copper pins this just feels timeless. Definitely one I’d love to keep! This Cu Mai steel is now available to other knife makers over at .
