Non-stick at £30-£80, replaced every 3-4 years: across forty years of cooking you have spent several hundred pounds and sent a dozen pans to landfill.

Most cookware looks worse with use. Copper does the opposite.

The colour you see on a used copper pan is patina - heat cycling over time, different on every piece. The tin lining darkens too. Neither is damage. Both are signs of a pan being cooked in properly.

Copper does not depreciate with use. It develops character.
