Vanilla Bean Greek Yoghurt Ice Cream 🍦

This started as one of those “surely this won’t actually taste like ice cream” recipes… but honestly, it’s so good.

Creamy, vanilla-packed, and made with Greek yoghurt, so it has a bit more staying power than the usual ice cream crash.

No ice cream machine. No long ingredient list. Just a really easy freezer recipe to keep on hand when you want something cold and sweet.

We’ve been eating it with berries, spooned onto warm fruit, and straight from the container standing in the kitchen.

Pesto Chicken Salad - A high-protein, easy sandwich filling that takes the stress out of lunch.

This is one I make on a Sunday and use for the next few days.

Cooked chicken, a good pesto, mixed with Greek yoghurt.
Simple, but it works.

Use it in sandwiches, wraps, or spooned over a salad. It also holds up well in a lunchbox.

Those classic Easter nests… just made a little differently 🐣

These no-bake, low-carb krispie-style nests come together in around 10 minutes and are perfect for little hands and everyday snacking.

80 g dark chocolate 70% or above
15 g butter
40 g puffed rice
1 bag mini eggs for decoration (optional)

Melt the chocolate and butter together.
You can do this in the microwave in 30-second bursts, stirring each time, or in a heatproof bowl over gently simmering water until smooth.

Stir in the puffed rice until everything is well coated.

Spoon the mixture evenly into 6 moulds. Gently press it up the sides to create a small dip in the middle.

Place in the fridge for at least 30 minutes to set.

Once firm, remove from the moulds, add your toppings, and enjoy.
