Episode 3 - vs the Firevoré Nomad Grill

has taken the outdoor cheffing skills to the next level by testing the Nomad Grill with his own chicken Schwarma and homemade flatbread recipe.

INGREDIENTS 🍗

For the chicken:
– 8 boneless, skinless chicken thighs
– 3 tbsp olive oil
– 3 garlic cloves, crushed
– Juice of 1 lemon
– 1 tbsp ground cumin
– 2 tsp sweet paprika
– 1 tsp ground turmeric
– 1 tsp ground allspice
– 1 tsp ground cinnamon (optional, but classic)
– 1 tsp salt, plenty of black pepper
Flatbreads (makes 4):
– 250g bread flour
– 175g Greek yoghurt
– 1 tsp baking powder
– A pinch of salt
Yogurt Sauce:
– Garlic yoghurt
– Quick-pickled red onion (sliced red onion in red wine vinegar with a pinch of salt and sugar, 20 min)
– 2 tomatoes, chopped
– Fresh parsley and mint
– Chilli sauce (optional)

You’ll also need a long, sturdy metal skewer.

METHOD

1 Mix the marinade ingredients in a bowl. Turn the
chicken through it, cover, and leave at least 2 hours — overnight is better.

2 Mix the bread flour, Greek yoghurt, baking powder and salt into a rough dough, then knead on a floured surface for 2–3 minutes until smooth. Cover and rest while the chicken cooks.

3 Thread the thighs flat onto the skewer, layering them into a tight cylinder. Half an onion or potato at each end keeps it stable.

4 Get the NomadGrill hot with a good, deep bed of embers; you want high, direct heat for the
char.

5 Set the skewer up on the grill, rest the ends on the grill sides so the stack sits just above the grate. Turn every few minutes so every side colours and chars evenly for 25–35 minutes, until cooked through to 75°C.

6 As the outside crisps, shave off the charred outer strips with a sharp knife. Keep turning and
cooking the freshly exposed layers, shaving as you go.

7 Cook the flatbreads: divide the dough into 4, roll each out thin on a floured surface, and cook
straight on the grate for 1–2 mins a side until puffed and charred in spots.

Episode 2 of vs the Firevoré Nomad Grill + Recipe below🔥

Last time we saw Wayne produce a fry-up fit for a king but can the grill handle something a little more delicate?

Salmon tastes amazing when cooked by fire, especially with chilli lime butter but fish is a good test of the grill and the chef as it can easily be overcooked or fall apart.

absolutely smashed this challenge with a perfectly cooked side of salmon with flavours that delivered such a perfect balance of heat, salt and acidity to go with the sweet salmon, perfectly charred and caramelised by the grill.

We’re not ones to gate keep, so here’s the recipe below so you can give this a go too! Make sure to tag us in your photos 🔥

For the salmon 🐟

– 1 side of salmon (800g–1kg), skin on and pin-boned (or 4 fillets)
– Smoked salt
– A little oil, for the grate

For the chilli-lime sweetcorn 🌽
– 4 corn cobs
– 1 stick of butter (about 115g), softened
– 1–2 tsp chilli flakes
– Zest and juice of 1 lime

METHOD 📋

1 Make the chilli-lime butter: mash the softened butter with the chilli flakes and the lime zest and
juice until well mixed. Set aside — this can be done ahead.

2 Get the NomadGrill to a steady, medium-hot bed of embers and lightly oil the grate so the
salmon won’t stick.

3 Grill the corn cobs directly on the bars, turning, until tender and charred all over — 10–15
minutes. Roll them through the chilli-lime butter so it melts and coats.

4 Pat the salmon dry and season well with smoked salt. Lay it skin-side down on the grate and
leave it — don’t fiddle — until the skin crisps and it releases cleanly.

5 Turn carefully and finish until the salmon is just cooked and flakes, to 55–57°C.

6 Serve the salmon with the buttery corn alongside and any leftover chilli-lime butter spooned over the top.

🔥 FIRE TIPS

🔥Oil the bars and let the salmon sit on its skin until it releases on its own — if it sticks, it isn’t
ready to turn.

🔥Cooking it mostly skin-side down protects the flesh and gives you crisp skin.

🔥The corn loves a hard char, so don’t be shy with the fire.
