Watching grain turn into fresh flour never gets old!
There’s something very satisfying about baking with flour you’ve milled yourself, especially when the bread comes out of the oven.

With a Mockmill, you can mill fresh flour at home in minutes, then use a sieve to sift out some of the bran and husk if you fancy a lighter flour.

Following on from milling the Yellow wheat grain, here it is baked!
Does anyone else get this excited cutting into a loaf for the first time?!

As I mention in the video, this dough had a bit of a journey: shaped, taken on the tube, then into the fridge for 2 nights before finally being baked! So the results could be quite different if I’d stuck to a more practised timeline.

It’s also worth mentioning that this loaf was made with 100% home-milled Yellow wheat grain, no strong bread flour added.

Ingredients:
• 220g water (plus two additional 10g increments)
• 60g starter
• 300g freshly milled flour
• 6g salt

Darryn baked our rye bread recipe as one huge loaf in the 12x12x40 Pullman pan and this absolute whopper weighed in at over 4kg once baked.

Dense, hearty and packed with seeds, it’s the kind of loaf that keeps you going. Perfect for batch baking, the loaf was sliced up, with half frozen ready to pull out a slice at a time.

A proper bakery-style bake at home with deep rye flavour, great texture and enough bread to keep lunches sorted for days.
