If you’ve ever found yourself in Greece during the 49 days leading up to Easter, you’ve probably noticed something wonderful: plant-based food is everywhere.

Even though the word "vegan" might feel modern, the tradition of Nistisima (fasting food) has been around for centuries. During Lent, most local bakeries, tavernas, and home kitchens naturally shift away from meat and dairy. Because of this, you aren't stuck with "substitute" foods, you're eating incredible, whole-food dishes that have been perfected over generations. After all, Mediterranean cooking is naturally veggie-forward at its core.

My lunch today was a mix-match of many things, and a very hearty and flavourful, plant-based meal. Creamy fava (yellow split pea puree), dolmades (grape leaves stuffed with rice and herbs), sauerkraut (not Greek but I eat it regularly), and pita.

Whether you're observing the fast or just looking to add more plants to your plate, it’s a beautiful time to be in a Greek kitchen. 🌿🥣
