Creamy Pancit Palabok - Best-seller ni Bestfriend
Ingredients:
1) Garlic - Achuete/ Annatto Oil
1 cup - cooking oil
1cup - garlic
1/4 cup - achuete/ annatto seeds
500 grams - cornstarch noodle or rice vermicelli (cook as per package instruction)
2) Shrimp - Tinapa Stock:
4 cups - water
1 tsp - cooking oil
1 tsp - salt
3 pcs - Tinapa heads (smoked fish)
3) Tinapa Flakes
2/3 cup - shredded tinapa
1 tsp - garlic - achuete oil
4) Pancit Palabok Sauce:
Garlic - Achuete oil, save half
1 cup - onion
350 grams - ground pork
1 tsp - ground pepper
1/4 cup - fish sauce
*Shrimp - Tinapa Stock
2 cups - coconut milk
1 cup - full cream evaporated milk
1 - shrimp cube
1 tbsp - spicy chilis
*Thickening Sauce:1/4 cup all purpose flour + 1/4 cup cornstarch + 1 cup water + 10 grams achuete powder
5) Toppings:
*remaining Garlic - Achuete Oil
1/2 cup - chicharon flakes
*Fried garlic
*Tinapa flakes
*Palabok Sauce
*Shrimps
3 stalks - spring onion
3 pcs - hard boiled eggs
Season with Calamansi juice + Fish Sauce
Cooking Time: approximately 1 hour & 20 minutes
