Shrimp Wrapped
Ingredients: Serves 2
▪︎ 10 pcs shrimp ( cooked season with salt and pepper)
▪︎ Tortilla [small]
▪︎ 1 Avocado [must with fork or blend for smooth consistent]
▪︎ tomato, onion, cucumber [diced]
▪︎lemon
▪︎salt and pepper to taste
or peri-peri powder
▪︎ sriracha
▪︎ spring onion or coriander [garnishing - optional]

♡ Mash avocado with fork or blend for smooth consistency. Season with salt and pepper and lemon.
♡Cut and dice vegetables
♡Heat up tortilla on pan or toast. Careful not to don't burn it.
♡Assemble: Tortilla spread with avocado mashed then vegetables ( sprinkle or season diced vegetables with peri-peri seasoning or salt and pepper), add shrimp, add garnishing. Add sriracha for heat option. Enjoy!

NOTE for easier preparation: ▪︎DICED VEGETABLES [tomato, cucumber, onion] CAN BE ADDED OR MIX TO MASHED AVOCADO THEN SEASON THEM WITH SALT, PEPPER AND LEMON.

ORANGE CAKE:
Ingredients:
1 ¾ cup all-purpose flour
½ teaspoon salt
2 teaspoon baking powder
1 ¼ cup sugar I used fine sugar
½ cup milk
½ cup of orange juice
¼ cup oil
¼ cup melted unsalted butter
3 medium size eggs
1 tablespoon orange zest
1 teaspoon vanilla

Instructions

Preheat oven to 350F/180C. Butter or line with parchment paper a 9 by 5-inch loaf pan and set aside.
Sift together the flour, baking powder, and salt set aside.
In a different bowl, add the melted butter, oil, sugar, and beat until well combined.
Add the eggs one at a time beating the mixture after adding each egg.
Add the milk and whisk, then add the orange juice, orange zest, and vanilla and whisk for one minute.
Add the dry ingredients to the wet and gently mix for a few seconds. You might see small lumps in the batter, please ignore it but don’t over mix the batter. The lumps will dissolve and won’t be seen in the cake after it is baked.
Pour the orange cake batter in the previously prepared baking pan.
Bake, the batter for 40 to 45 minutes or until its golden and a skewer inserted in the middle of the cake, comes out clean.
If you have used parchment paper in the pan, then pull the cake out of the pan from both side of the parchment paper and place it over a cooling rack for 10 minutes, then remove the cake from the parchment paper and keep it on the cooling rack to cool completely.
If you are not using parchment paper, then remove the pan from the oven and transfer it to a cooling rack, after 7 minutes remove the cake from the pan and place it over the cooling rack to cool completely.

Yaki Udon

Ingredients:
▪︎ 2 Udon [follow package cooking instruction]
▪︎ 200g meat of choice [ season with salt and pepper and a dash of cornstarch]
▪︎ 2 stalks of celery [any green vegetables]
▪︎ carrots
▪︎ onion
▪︎ spring onion
▪︎ chili garlic sauce [ optional ]
▪︎Oil, garlic

Sauce:
▪︎ 2 Tablespoon oyster sauce
▪︎ 1 Tablespoon low sodium soy sauce
▪︎ 1 Tablespoon sesame oil
▪︎ 1 Tablespoon dark soy sauce
▪︎ 2 Tablespoon water or no salt broth
▪︎ 1 tsp cooking wine [ optional ]

♡ Mix the sauce ingredients and save 1 Tbsp to add and marinate the meat .
♡Stir-fry garlic and onion, add vegetables. Set aside. Stir-fry meat until brown and fully cooked. Add back the vegetables, add the udon then the sauce. Mix well. Add sesame oil for aroma. Serve.
♡ NOTE: DON'T OVERCOOKED UDON WHEN PRECOOKING OR IT WILL BE MUSHY. FOR CHEWY TEXTURE, WASH IT WITH COLD WATER AFTER PRE-BOILING.

Honey-Soy Asian Salmon in Foil
Ingredients:
2 pounds salmon
1/4 cup honey
3 cloves garlic, minced
2 Tablespoons reduced sodium soy sauce
1 Tablespoon seasoned rice vinegar
1 Tablespoon sesame oil
1 teaspoon freshly grated ginger
1 1/2 teaspoons Sriracha, or to taste, optional
2 green onions, thinly sliced
1/2 teaspoon sesame seeds

Instructions
Preheat oven to 375 degrees F. Line a large baking sheet with aluminum foil.
In a small bowl, whisk honey, garlic, soy sauce, rice vinegar, sesame oil, ginger and Sriracha.
Place salmon onto prepared baking sheet and fold foil edges inward slightly. Pour honey mixture over the salmon. Fold foil over salmon, covering completely and sealing completely closed.
Bake until cooked through, 15-20 minutes.* Open packet and broil for 4-5 minutes, or until salmon is caramelized and slightly charred.
Garnish with green onions and sesame seeds.

🥩🦐 Garlic Butter Surf & Turf 💛🔥

🧾 Ingredients

For the steak:
• 2 ribeye or sirloin steaks (about 250–300 g each)
• Salt & black pepper, to taste
• 1 tbsp olive oil
• 2 tbsp butter
• 2 garlic cloves, smashed
• 1 sprig rosemary or thyme

For the shrimp:
• 200 g large shrimp, peeled & deveined
• 1 tbsp butter
• 2 garlic cloves, minced
• ½ tsp smoked paprika or Cajun seasoning
• A squeeze of lemon juice
• Salt & pepper, to taste

For the garlic butter sauce:
• 3 tbsp butter (melted)
• 2 garlic cloves, minced
• 1 tbsp chopped parsley
• ½ tbsp lemon juice
• Pinch of chili flakes (optional)



👩‍🍳 Instructions

1. Prepare the steak:
• Bring steaks to room temperature and pat dry.
• Season generously with salt and pepper.
• Heat olive oil in a skillet over high heat.
• Sear steaks 3–4 minutes per side (for medium-rare), adding butter, garlic, and rosemary during the last minute to baste.
• Remove and let rest 5 minutes.

2. Cook the shrimp:
• In the same pan, add 1 tbsp butter.
• Sauté garlic for 30 seconds, then add shrimp.
• Season with paprika, salt, and pepper.
• Cook 1–2 minutes per side until pink and slightly golden.
• Squeeze in lemon juice and toss to coat.

3. Make the garlic butter sauce:
• Melt butter in a small bowl, stir in garlic, parsley, lemon juice, and chili flakes.

4. Serve it up:
• Slice steak against the grain.
• Arrange shrimp on top or alongside.
• Drizzle everything generously with the warm garlic butter sauce.
• Garnish with extra parsley and a wedge of lemon 🍋.

🍝 Creamy Herb Chicken with Vegetables over Pasta 🥦🥔🍄

🛒 Ingredients

🐔 2 chicken breasts, cut into chunks

🧂 Salt & pepper, to taste

🌿 1 tsp dried parsley or Italian herbs

🧄 2 garlic cloves, minced

🧈 1 tbsp butter

🧄 1 tbsp olive oil

🥔 1 large potato, peeled and cubed

🥦 1 cup broccoli florets

🥕 ½ cup baby carrots

🍄 ½ cup mushrooms, sliced

🥛 150ml cream (or half-and-half)

🧀 2 tbsp grated Parmesan (optional)

🍝 150g linguine or fettuccine pasta

👩‍🍳 Instructions

Cook the pasta: Boil pasta in salted water until al dente (8–10 minutes). Drain and set aside.

Boil potatoes: In a separate pot, cook potato cubes for 10–12 minutes until just tender. Drain and set aside.

Sauté chicken: Season chicken with salt, pepper, and herbs. Heat olive oil in a pan, add chicken and cook for 5–7 minutes until golden and cooked through. Remove and set aside.

Cook veggies: In the same pan, melt butter. Add garlic, mushrooms, carrots, and broccoli. Sauté for 4–5 minutes until slightly tender.

Make the sauce: Add cream to the pan. Bring to a simmer, then stir in Parmesan (if using) and cooked potatoes. Simmer for 2–3 minutes until slightly thickened.

Combine all: Return the chicken to the pan and toss everything gently. Serve over the cooked pasta.
