Peruvian Ginger Beef Stir-Fry
Serves: 3–4
Marinating time: Preferably overnight
Ingredients
* 400 g beef strips, diced
* Soy sauce
* Peruvian ginger powder
* 3 garlic cloves, finely chopped, or garlic granules
* 3 peppers, sliced
* 2 onions, diced
* 3 carrots, sliced
* Broccolini or broccoli
* Fresh ginger, finely chopped
Method
1. Marinate the beef
Place the beef strips in a bowl and add the soy sauce first, tossing well to coat.
Sprinkle over the Peruvian ginger powder and mix thoroughly. Adding the soy sauce first helps the ginger powder coat the beef evenly.
Cover and refrigerate, preferably overnight.
2. Stir-fry the beef
Heat a wok or large frying pan over high heat.
Add the marinated beef and stir-fry until nicely browned.
3. Caramelise the fresh ginger
Add the chopped fresh ginger to the hot pan and stir-fry with the beef. Allow the ginger to caramelise slightly, bringing out its natural sweetness and creating a deeper, richer ginger flavour.
4. Add the vegetables
Add the peppers, onions and carrots and stir-fry until they begin to soften while still retaining some bite.
Add the garlic, followed by the broccolini or broccoli.
Continue stir-frying until the vegetables are cooked to your liking and the beef is cooked through.
Serve immediately.
