Next up in my Cookbook Series is Neven Maguire's Home Economics for Life.

Sweet, buttery. golden, and short traditional Irish scones, these taste incredible fresh from the oven with lashings of real butter and strawberry jam (or whipped cream if you're feeling fancy!). Swipe ➡️ for the original recipe, and see the changes I made outlined below. Happy baking! (Note: GF flour tends to need more liquid, so I added more than suggested in the recipe. See below).

Recipe: Scones
Modifications:
• Use 225g gluten free self raising flour blend ✅️ (I used FREEE).
• Add 1 tsp bicarbonate of soda instead of baking powder.
• Mix together 6 tbsp milk, 2 tbsp natural yoghurt and 1 egg. Add 2/3 of the liquid to the scone mixture as directed in the recipe. Reserve 1/3 to brush on the scones before they go in the oven.

We had such a beautiful afternoon Galway Pumpkin Patch, which is currently a Sunflower Garden. The kids had such fun choosing sunflowers to pick and take home, and there were loads of fun activities to do on site. They're open this weekend, and I'd highly recommend a visit if you are looking for something fun and different to do with little ones. Scroll to the end to see how Evie-Marie caught the exact moment 📸 that Páidí spotted a bumble bee. 😂😂😂 Thanks to a wonderful friend for the recommendation. ❤️
