I took advantage of a brief spell of sunshine this morning to pick some herbs from the garden - the first chive harvest of the year and some of last year’s flat leaf parsley which has started to grow again. 😊
These will be washed, chopped and frozen for use over the coming months - chives for summer salads and my cheese & chive scones and parsley for tabbouleh, garlic bread, sauces and garnishes.

The rain set in again today so I’ve had to abandon the garden and get back to baking. This simple traybake is very easy to make, uses vegetable oil instead of butter, and fresh raspberries in the sponge topped with Demerara sugar and flaked almonds for the crunch. Delicious 😋

Welsh Cakes ... not just for St David's Day!
I had a busy weekend so this is definitely on my list for this week. No need to put the oven on. Simply griddle them on the stove top until lightly browned and serve warm sprinkled with sugar. Yum.
