"Sticky Chili Beef Stirfry"

I double the beef. When using a cheaper cut I marinade it overnight.

In the "High Temperature" collection I ones discovered "Stirfried Vegetables". It's great for adding extra vegetables to any dish.

To make this dish really quick:
Cook the rice first, keep warm in a thermoserver.
While rice is steaming prep your vegetables.
Stirfry vegetables in the Thermomix while frying your beef in the wok.
Than combine everything in the wok and you set for serving.

Weekend Fakeaways

Ever thought of making Paella in the Thermomix.

I came across this one a "Paella with Chorizo and Prawns" my household loved it - no leftovers. Anything with Chorizo is winner.

Do use Paella rice, the dish needs a starchy rice.

Add extra veg, frozen peas roasted red peppers or aubergines.
In order to make it vegetarian use smoked tofu - fried in the airfryer and added to the finished dish.

Idea for Friday fakeaways:
Quick Greek Gyros, Tzazitki and homemade Pita bread.

The cookidoo recipe makes the Gyros spice mix, which should last for about 3 times the recipe.

Instead of the pork you could use peppers, carrots, etc to make it vegetarian.

When making the Tzatziki use Greek Yoghurt, gives a more indulgent version. And remove the seeds from the cucumber that would make it watery.

Get fresh yeast in any of the Eastern European Shops. The dough will rise better and quicker. Baking tray needs to be hot when putting the rolled out pittas on it. Cover inside a towl after baking to keep the moisture inside and the pitas soft.

It's a season not only Christmas Day. I love to bake the first Mince Pies and Plaetzchen (German Xmas Cookies) at the beginning of December and indulge.

When I first moved to Ireland, nearly 30 years ago, I adored the Superquinn Mince Pies.Β  After a lot of searching I was handed the perfect recipe.
For me the pastry has to have butter/margarine, not lard. I bake mine in a shallow pie tin. When using a muffin tin, if it's too deep, the pies can break, and half stays behind in the tin.
Remember any leftover pies freeze them.
It's always nice to have some ready; defrost and warm them up for 6/7 minutes at 180 degrees.

Spitzbuben or Terrassenplaetzchen are jam-filled almond butter sandwiches cookies.
These are a favorite in my household. I definitely have to make at least 2 batches. Roll out the dough a little bit thicker.Β  Fill them with black currant jam, something tangy to offset the sweetness of the pastry. Dust with icing sugar and store in the tin.

Eggnog Snickerdoodles: last year I came across this tasty recipe. There is eggnog and Christmas spices in the dough. Before you bake them, roll the dough ball in sugar and extra spice. It will give you that Christmas feeling.

Cranberry sauce: you will see cranberries appearing now in every shop. Why not make your own homemade sauce? Just follow the Cookidoo steps in the guided recipe for cranberry sauce. Definitely use Port in the sauce. I like to add a handful of dried cranberries and one tablespoon of good orange marmalade with peel before step 3 to give it extra flavour and texture.
Did you know you can freeze cranberry sauce? Otherwise it keeps for 1-2 weeks.

More Plaetzchen next week and I have to get going on the chocolate almonds and some icecreams....

Week 4 of Christmas Preparations

It was a busy week with Christmas Classes and TM7 demos, but I still managed to squeeze 3 bits in.

My Christmas would not be complete without a German stollen or, as a former boss used to say, the Christmas season starts when Sandra brings in her Stollen!

You can make Stollen with yeast, the traditional Dresdner Stollen, but it needs to rest for a couple of weeks. I prefer the recipe which uses fromage frais/quark. Bake it, and you can eat it the next day. The "Pflaumen Quark Stollen" in the German Cookidoo is close to my family recipe. The only cardinal sin are the plums. I never had nor saw a Stollen with plums; swap for a mix of raisins, sultanas & currants of the same weight.

Do invest in a triangular tin! Makes baking so much easier and you get that typical shape. You can get them online; note there are full (approx 39cm) and half sizes (about 21cm).

Cheese Crackers: It's quickly mixed and rolled up in a log. If you bake them on the day, the log needs to rest for 2 hours. Therefore, I like to freeze the log.
On the day before I want to bake, I take the log out and defrost it slowly in the fridge. Cut the log into slices, sprinkle with sesame, cumin or nigella seeds and bake.
Delicious with the Carmelised Red Onion Chutney!

Who doesn't enjoy a homemade gift?
Hot Chocolate Powder is very simple to make. Yummy, made from scratch, and you know exactly what's in it.
Jazz it up with Mixed Spice or Mint, choose one or make two batches. They keep for 12 months.
