My little story Part I
Hi, I’m Katya.
I’m one of those people who never read the table of contents —
I jump straight to the last page.

Eight years ago, already a certified pastry chef and dessert consultant, trained in France,
I decided to conquer a new world — the world of baking.
I was chasing one thing: the secret knowledge of .

Back then, I barely knew what sourdough really was.
But I knew one thing for sure —
that magical flavor had to be mine.

And I was ready to get it
no matter the cost.

So in 2018, I walked into a baking school
and met my very first mentor 🫶

That’s where the real journey began 🔥

Panettone “Yin–Yang”

I don’t create desserts —
I create memories.

The first bite of panettone —
like a first kiss.
You’ll remember it for a long time.

Love at first bite.
The most beautiful and original way to confess your feelings —
through taste, not words.

I created a panettone with an exceptionally long finish —
like after truly good s*x:
warmth, intimacy, and the desire to return.

Wild cranberry — bold and vibrant.
Fresh yuzu — clean and luminous.
A subtle note of sumac — gentle tension.
Soft dolce chocolate — depth and roundness.

On top —
a Ruby chocolate glaze.
Freeze-dried strawberries
and rose petals —
as a final touch.
Like a gesture that completes the moment
and stays in memory.

A balance of opposites.
Tenderness and character.
Light and shadow.

Yin and Yang.
