Lemon Sumac Chicken
A vibrant, citrus forward baked chicken dish that brings together the tangy complexity of sumac and the zesty kick of lemon pepper.
Using jumbo lemons is key as they provide deeper citrus flavour, more juice and fragrant slices that caramelise beautifully during baking. For the best results, marinate the chicken for a minimum of 2 hours, allowing the exotic spices and creamy marinade to fully pe*****te the meat.
Thinly slice jumbo lemons and arrange them across a baking tray along with a generous layer of sliced onions. Place the marinated chicken pieces over the lemon and onion bed, then pour any remaining marinade evenly over the top.
As the chicken bakes, the lemons release their juices while the onions soften and absorb the aromatic spices, creating a flavour packed base.
Bake for 35β45 minutes, turning the chicken halfway through to ensure even cooking and a beautifully golden finish on both sides. The marinade will reduce into a rich, creamy sauce that coats the chicken with layers of citrus, spice and savoury depth.
To serve, arrange the baked chicken on a platter, layering the roasted lemon slices throughout. Top with the spiced onions from the tray and garnish generously with fresh coriander leaves. Finish by spooning over a little of the remaining creamy curry from the baking dish, allowing it to gently drip over the chicken for extra richness and flavour.
This dish pairs wonderfully with saffron rice, flatbreads, or a fresh Mediterranean style salad.
