Perfect cake for the summer season. No bake Kunafa Mango Cheesecake.
Ingrediets:-
For thr Crust -

100 gm Sewai
20 gm butter
40 gm condensed milk

Filling-
200 gm cream cheese
120 gm heavy cream
50 gm mango puree ( fresh)
30 gm melted white chocolate
7 gm gelatin
1 tsp vanilla essence
1 tsp lemon juice

Topping-
20 gm mango puree
1/2 cup diced mango
20 gm sugar
1 tspn lemon juice.

Method :
1. Roast sewai in butter untill it turns in golden colour.
2. Add condensed milk and cook for 1 minute.3
3. Press the mixture into bottom of desired springform mould and refrigerate for half an hour.
Filling-
1. In a bowl stir gelatin with water and let it bloom.
2. In a bowl beat cream cheese & add heavy cream, vanilla extract and beat to soft peaks.
3. Now pour melted white chocolate, mango puree and lemon and beat untill combined.
4. Melt the bloomed gelatin in microwave for 10 seconds and add into filling after cooling it, mix the mixture lightly.
5. Pour the mixture into same springform mould over the crust and refrigerate for 3 hours.
Topping-
1. Heat a pan and add mango puree along with sugar and coom untill sugar dissolves.
2. Add lemon, cook for 2 minutes and then add cubed mango, mix it well and put the fame off.

After 3 hours, take out the cake from mould n spread the topping over cake and put some Kunafa ( sewai mixture) on top.
Serve chilled.

Here cames the Eid special recepi.
Zarda Pulao / Meethe Chawal.

Ingredients :-
1/2 cup basmati rice
4 tsp Ghee
1/2 cup sugar
1 cup water
4 cloves
2 pod cardamom
1/4 tsp saffron
1/2 tsp saffron colour
1 tspn raisins
2 tspn cashew
1/2 cup khoya

Method :-
1. Take a kadai heat 2 tbsp ghee and roast cashew and raisins to golden brown on low flame.
2. Keep the dry fruita in a bowl aside.
3. In the remaining ghee add cardamom and cloves & the add 1 cup water, ¼ tsp saffron and ¼ tsp orange food colour.
4. Mix well making sure the colour is mixed well.
5. Add 1 cup soaked basmati rice and mix well, cover and cook on medium flame for 12 minutes.
6. Mix gently, making sure rice is half cooked.
7. Now add ½ cup sugar, 2 tbsp ghee and roasted dry fruits & mix gently untill sugar melts.
8. Cover and coom for 5 minutes on medium flame.
9. Stir occasionally to prevent from burning, cook until the rice is cooked completely.
11. Serve in a bowl topped up with some khoya and gulab jamun (optional ).

Running out of paneer, and coudn't steppin out for meat. Here we have the substitute for tandoor grills. Tandoori aaloo tikka with just simple steps.
Tandoori Aloo Tikka

Ingredients:-
Marinate Mix-

1 cup thick curd
10 baby potatoes
3/4 cup big onion cut into cubes
3/4 cup capsicum cut into cubes
1 tbsp oil
2 tsp lemon juice
salt to taste
oil to fry

Spice mix:-
1 tbsp besan
a pinch turmeric powder

1/2 tsp tandoori masala powder
1/2 tsp ajwain
1 and 1/2 tsp kasoori methi
3/4 tsp pepper powder
1/2 tbsp ginger garlic paste
1/2 tsp chat masala powder
1/2 tsp cumin powder
1 tsp red chilli powder
1/2 tsp garam masala powder

Instructions:-
1. Boil baby potatoes with the pockets in covered pot for 15 minutes, it should be cooked soft but not mushy.
2. Peel the skin and prick holes with a fork or toothpick.
3. Get ready with all your ingredients. To a mixing bowl add hung curd.
4. Now add the spice mix listed under 'spice mix' in ingredients list.Add oil.Mix well.Marinate for 10 mins.
5. Add salt, cubed onion,capsicum and potatoes.
6. Mix well, & add lemon juice.Take your skewers.I used my metal skewer which came with my oven.
7. Insert the veggies alternatively. Toast on tawa until golden brown.Drizzle oil,turn over in between and slowly cook so that it is evenly cooked on both sides.
Serve hot with green chutney,lemon wedges and onions.

- 8-9 mint leaves
- Lemom cut into pices

Take a Glass mash mint leaves with lemon, add 1 pnch jeera powder, coriander powder,black salt,chat masala a pjnch and powder sugar and add iced cube. Pour chilled drinking soda in glass and mix it...garnish with mint leaves and lemon sliced.

- take a grinder jar..grind water melon ..and stain water melon juice in a jar and take a glass and por lemon and mint leaves mash them in glass and add to water melon juice..add powder sugar,black salt,chat masala mix it... Than fill half glass add iced cube and add in chilled soda..

This month we are celebrating the holy month of Ramazan & along with it festivities. And after a whole day of fasting we all deserve a fit meal and a dessert for our sweet taste buds. So conclude your day with this quick and easy weasy recipe for iftar. Gajar halwa / Gajrela.

Ingredients :-
1 kg Carrot grated
1 litre full fat milk
1 bowl Ghee
1 bowl Mava/ khova(roasted)
2 bowls sugar
Dry fruits (cashew, raisins, chironji, almond)
1 tsp Cardamom powder

Method:-
1. Take a kadhai on put on High flame add ghee when it'll turn hot add grated Gajar and fry it for 10-15 mins.

2. Add milk, keep stirring between 10-15 mins till when it'll come to little dry on high flame.

3. Now put the flame on medium, add sugar keep stirring otherwise it will become caramelized.

4. Add khoya and continue mix well . u can see ghee seperated from halwa and it turns dry.

5.Add all the dry fruits and cardamom powder mix well with fast hand on high flame after 5-10 mins turn off the stove.. serve hot.

Enjoy seared prawns smothered in a spicy sauce as a side dish along with noodles and rice for a weekday meal. This Butter Garlic Prawn will have you smacking your lips in utter satisfaction.

Ingredients :-
-250 gm prawns
-2 ounces butter
-1 tbsp chopped garlic
-1 tsp ginger chopped
-2 tsp soy sauce
-2 tbsp red chilli sauce
-1 tbsp sugar
-1/2 cup water
-1 tsp salt
1 tbsp chopped coriander leaves
1 tbsp sliced green onions

Method:-
1. Heat a pan and put butter along with 1 tsp garlic, 1 tsp coriander leaves and salt for seasoning. Add half the prawn and sear for 2 minutes on both side until golden then remove into a bowl.
2. Now in the same pan add remaining butter, garlic, ginger and cook for 1 minute on medium flame.
3. Add soy sauce, red chilli sauce, sugar and water, Stir and let it simmer for 3 minutes or until the sauce starts to thicken to a thin syrup consistency.
4. Add prawns in the sauce and toss to coat in sauce & cook for 2 minutes until sauce is reduce and coats the prawns nicely.
5. Sprinkle some coriander leaves and green onions. Serve hot with rice or noodles.
