Perfect cake for the summer season. No bake Kunafa Mango Cheesecake.
Ingrediets:-
For thr Crust -
100 gm Sewai
20 gm butter
40 gm condensed milk
Filling-
200 gm cream cheese
120 gm heavy cream
50 gm mango puree ( fresh)
30 gm melted white chocolate
7 gm gelatin
1 tsp vanilla essence
1 tsp lemon juice
Topping-
20 gm mango puree
1/2 cup diced mango
20 gm sugar
1 tspn lemon juice.
Method :
1. Roast sewai in butter untill it turns in golden colour.
2. Add condensed milk and cook for 1 minute.3
3. Press the mixture into bottom of desired springform mould and refrigerate for half an hour.
Filling-
1. In a bowl stir gelatin with water and let it bloom.
2. In a bowl beat cream cheese & add heavy cream, vanilla extract and beat to soft peaks.
3. Now pour melted white chocolate, mango puree and lemon and beat untill combined.
4. Melt the bloomed gelatin in microwave for 10 seconds and add into filling after cooling it, mix the mixture lightly.
5. Pour the mixture into same springform mould over the crust and refrigerate for 3 hours.
Topping-
1. Heat a pan and add mango puree along with sugar and coom untill sugar dissolves.
2. Add lemon, cook for 2 minutes and then add cubed mango, mix it well and put the fame off.
After 3 hours, take out the cake from mould n spread the topping over cake and put some Kunafa ( sewai mixture) on top.
Serve chilled.
