I have been experimenting with the perfect Chilli cheese sandwich..

Quantity per serving (1 sandwich)

1. Mozarella cheese - 50 gms
2. Half a green chilli - finely chopped
3. Garlic - 1 tbsp finely chopped
4. Red & yellow bell peppers - 40 gms finely chopped
5. Italian seasoning - 1 tsp
6. Salt
7. Coriander
8. Garlic butter for toast and for the filling - 6 gms

🥪 Grate the cheese and mix all the ingredients together and add half the butter to this and make it into a soft filling

🥪 Arrange the filling as shown and make the sandwich with the remaining butter. If using a toaster like this, make sure to flip the toaster and cook on both the sides on a low flame. Takes 2-2.5 minutes per sandwich.

🥪 Slice it and enjoy. You can make this on a tawa as a open toast too.

Bell peppers gives it the necessary crunch & juiciness for the cheese sandwich. Feel free to skip.

Vegetables in pasta sauce is an idea I love..

I am always a little under confident making other cuisine. I watch a lot of recipe reels and even save them thinking I ll attempt. Half the time I can’t find them when I want to..

This pumpkin sauce pasta was also one such recipe. Yesterday when I wanted to find the recipe I saved, I couldn’t. Infact I had seen multiple videos of this and I used my memory and my understanding of flavours to make this pasta.

Here goes my version of Pumpkin Sauce pasta for 2 people

1. Penne pasta - 80 gms
2. Pumpkin - 100 gms
3. Red and yellow bell pepper - 50 gms together
4. Onion - 50 gms
5. Garlic pods - 6 huge pods
6. Cherry tomatoes - 5-6 nos
7. Olive oil or butter or ghee - 15 gms
8. Feta cheese - 50 gms
9. Mozarella or cheddar cheese - 50 gms
10. Italian seasoning
11. Salt

Boil the pasta in salt water like usually do, drain and set it aside.

In a pan sauté all the veggies roughly chopped. After sautéing for a few minutes, add 1/4th cup of water and cover and cook the veggies. Once the veggies are cooked, let it cool down. Add salt as required.

Grind it along with feta cheese and this gives you a creamy rich pasta sauce. Adjust the consistency if needed with some water.

In the same pan add little bit more oil / butter and add this sauce and cook for 2 minutes. Mix the pasta to this and let the sauce coat the pasta well. Add Italian seasoning. Let it cook for 2-3 minutes. Add half the mozarella cheese now and mix well.

Transfer it to the plate and add the remaining as a topping on the plate.

Delicious gourmet pasta ready at home ❤️

We were left wanting for more. This has actually opened me up to try more veggie pasta recipes in the future.

I personally felt the colour very appealing and the sauce was super rich and it was very filling. Checked the carbs, protein and fibre aspect too.

Soul filling Meal Plates ❤️

Made an amazing sandwich today..

Spring onion paneer cheese sandwich along with a dip 🙂 It tasted out of the world and I had 2 people agree to it ❤️ &

Here goes the recipe..

Crumbled paneer - 200 gms
Mozarella cheese - 100 gms
Spring onion - 1 full bunch including bulb and the green part
Garlic finely chopped - 2 tbsp
Season with - Italian seasoning
Salt

Mix it well and divide into 3 portions. This is a super loaded sandwich. (You can even divide into 6 portions)

I used a nonstick stove top griller. Spread some ghee on the griller placed a slice of bread and carefully pressed the filling. If you are only making 3 sandwiches, you need to take some time to patiently place the filling on the bread coz it will be overloaded .

Now keep another bread. Apply ghee on top. Close and cook on both sides. The sandwich will be done in 2-3 minutes. I used about 5 gms of ghee for each sandwich. You can use butter or garlic butter too.

For the dip…

I soaked about 10 sun dried tomatoes in hot water and then made a paste of it by grinding it along with salt, Italian seasoning, chilli powder, lemon juice and 60 gms of thick curd. Yummmy dip. You can even add it on top of the filling but we chose to have it on the side.

I think we ll make it very often ❤️

I am in a mood to try different things... (seasonal) let’s see how long it lasts..

I have seen watermelon feta cheese salads on the menu in many restaurants. But never once I have ordered.

On Insta also I have seen these salads so many times.

Today, I was in a mood to experiment being a Sunday..

Watermelon - 200 gms
Feta cheese - 100 gms
Yello Zuchinni, English cucumber , cherry tomatoes - 100 gms
5 grams - walnuts
Basil, olives and Jalapeños - few

Wanted to add onion - but forgot..

Dressing

1. Olive oil - 5 gms
2. Balsamic vinegar - 7-8 ml
3. Lemon juice of 1/2 a lemon
4. Freshly ground pepper - 1/2 tsp
5. Little bit of Italian seasoning.

Mix everything together and enjoy immediately.

This was one serving. I made the same proportions in another bowl for my husband too.

We enjoyed and we are too full to move 🙈

Back to making delicious, quantified and colourful meal plates.. (I have been making but just more meticulously and planning to post also more often)

Super balanced and a heavy meal with lots of carbs, protein , fats and fibre.

Mattar paneer , capsicum peanut Sabzi and ghee Phulkas.

You can find the recipe for capsicum peanut Sabzi on my page. I do mattar paneer in pressure cooker. I grind the onion tomato ginger garlic green chilli into a paste and then saite it along with spices and add dry masalas , add in the peas and paneer cubes. Pressure cook for 2-3 whistles. I finish it off with kasoori methi, few tbsps of curd and coriander.

I cooked for 3 today and for the paneer and capsicum Sabzi I used a total of 18 gms of ghee.

It’s crazy how much flavours you can bring in with very little fat too.

Seeing so many salad bowls, I felt like making one today..

It was so random..

Onion, cherry tomatoes, corn, peas, broccoli, green zuchinni, carrot, lettuce, capsicum. (Boiled all that needs to be cooked a bit for a few minutes)

Sautéed the rest in garlic butter. Added the boiled veggies, added moong dal soaked in hot water for about 20 minutes. Gave it a good mix. Added salt. Turned off. Topped it off with feta cheese. 🧀

For the dressing, took thick curd and added few sun dried tomatoes I got from Ladakh along with lemon juice , Italian seasoning and pepper powder. Made a paste with mixie jar.

Added and gave a good mix in the salad bowl. Tastes good ❤️
